But one thing is certain to me:

Organic | Important, but always product-related

For individual products, the respective organic status must still be considered.
Organic can be an important product feature.
But organic alone does not answer:

How was it stored?

Early harvest | no automatic premium guarantee
Many interesting olive oils are created from early-harvested fruits.
Depending on variety, region, and harvest time, an early harvest can be associated with:

- Lower oil yield
But:
Early harvest alone does not make a premium olive oil.
The entire processing must be right.

Many modern quality producers work with mechanical extraction and centrifugation.

Premium quality does not have to look romantically produced. It has to be professionally well-made.
What people in China or South Korea like | I don't decide that
This is also important to me.

A country has no single taste.
A person has taste.
That is a big difference.
