There are surprisingly many rules when it comes to olive oil.

Only buy from specialty retailers.

Never heat it.

Always use the latest harvest.

The greener and sharper, the better.

Cheap olive oil is likely diluted.

And if the bottle says "extra virgin olive oil," everything is fine anyway.

Some of these statements contain a grain of truth.

Others are too generalized.

And some are simply wrong.

For me, that is exactly the problem.

Because anyone who wants to buy good olive oil does not need a new collection of myths.

They need criteria.

What does the label actually say?

Which information is important?

Can high-quality olive oil be heated?

How do you protect the bottle after purchase?

And can you really infer quality from price, color, or origin?

I have therefore recompiled the five most common mistakes.

Some of these happen when buying.

Others only at home.

And one begins in the mind:

when a single characteristic is expected to explain the entire bottle.

Mistake 1 | Confusing the place of purchase with quality

The old Green Agora article began with:

"Buying on the supermarket shelf" is a mistake.

I wouldn't write that today.

A supermarket can sell excellent extra virgin olive oil.

A specialty retailer can sell mediocre oil.

And a direct import is not an automatic guarantee of quality.

The distribution channel does not produce the olive oil.

What is crucial is what happened to the olives beforehand and to the oil subsequently.

This includes, among other things:

  • Olive variety
  • Condition of the fruit
  • Time of harvest
  • Time between harvest and processing
  • Work of the mill
  • Temperature and process control
  • Filtration
  • Storage
  • Bottling
  • Packaging
  • Transport
  • Storage conditions at the retailer

The place of purchase is therefore only one part of the chain.

Specialty retailers can have a major advantage if they can provide more information about the product, producer, harvest, and sensory characteristics.

But that is an advantage of transparency and advice.

Not a law of nature.

How do you recognize good olive oil?


What I check instead when buying

When I have an unknown bottle in front of me, I am not interested in:

Supermarket or gourmet shop?

Instead, I check:

  • Which legal category is on the label?
  • Which origin is stated?
  • Is the producer traceable?
  • Which olive variety is mentioned?
  • Is a harvest year or harvest time stated?
  • How is the oil packaged?
  • How was it stored?
  • Is there verifiable sensory information?
  • Is there a specific lab reference for any analytical claims?

Not every piece of information needs to be on every bottle.

But the more I can know about a product, the better I can classify it.


Harvest date | Important, but not as simple as "newer = always better"

Freshness is important with olive oil.

Olive oil generally does not get better through years of storage.

During storage, the following change, among other things:

  • Aroma compounds
  • Phenolic compounds
  • Tocopherols
  • Oxidation parameters
  • Sensory properties

That is why a harvest year is valuable information.

However, it is interesting that:

Under European law, stating the harvest year is not fundamentally mandatory for every bottle.

If a harvest year is stated on extra virgin or virgin olive oil, this statement may only be used if:

100 percent of the contents come from that harvest.

That makes the harvest year a useful piece of transparency information.

But it is not the only information regarding shelf life.

A very stable, well-produced, and optimally stored oil can develop differently than a poorly produced oil from the same harvest.

Freshness is important | but freshness alone does not produce quality.


Harvest year, bottling date, and best-before date are three different things

These details are often confused.

Harvest year

Shows which harvest the olives come from.

Bottling date

Shows when an oil was filled into the sales container.

An olive oil may have been stored beforehand under suitable conditions in a larger tank.

Best-before date

Is not a statement about when the olives were harvested.

A far-off best-before date therefore does not automatically mean:

fresh harvest.

For the most accurate assessment possible, one should not confuse these three pieces of information.


Mistake 2 | Relying blindly on "extra virgin olive oil"

Here the old article had an important point.

But the phrasing:

"The label alone does not guarantee quality."

needs precision.

Because "extra virgin olive oil" is not meaningless.

It is a legally defined quality grade.

According to current European marketing standards, extra virgin olive oil must meet certain chemical and sensory requirements, among others.

These include, for example:

  • free acidity of no more than 0.80 percent
  • peroxide value of no more than 20.0 mEq O2/kg
  • K232 of no more than 2.50
  • K268 or K270 of no more than 0.22
  • ΔK of no more than 0.01
  • Median of defects of 0
  • Median of fruitiness greater than 0
  • Fatty acid ethyl esters of no more than 35 mg/kg

Further analytical requirements apply.

This means:

Extra virgin olive oil is a real quality category.

But this category does not describe every characteristic that might be interesting for a demanding buyer.


Why two extra virgin olive oils can still be completely different

Two bottles can both be legally classified as extra virgin olive oil and still represent completely different products.

For example, regarding:

  • Olive variety
  • Region
  • Producer
  • Harvest time
  • Fruitiness
  • Bitterness
  • Sharpness
  • Aromatics
  • Phenolic profile
  • Stability
  • Processing
  • Storage

That is why I say at Green Agora:

The quality grade is the beginning | not the complete quality profile of a bottle.

Extra virgin olive oil | What the quality grade really means


Acidity | Also not the sole proof of premium status

A competition also quickly arises regarding acidity.

0.5 percent.

0.3 percent.

0.2 percent.

0.1 percent.

And this turns into:

The lower, the better.

A low value can be interesting analytical information.

But it does not explain:

  • whether the oil is sensorially flawless
  • how it tastes
  • how fresh it is
  • how high its peroxide value is
  • what the UV parameters look like
  • which phenolic profile is present
  • whether it was stored well

Furthermore, you do not simply taste free fatty acids as "acidity" on the tongue.

A single laboratory value explains a specific analytical aspect | not the whole bottle.


Mistake 3 | Not heating high-quality olive oil at all

This is probably one of the most persistent olive oil myths.

The old article essentially said:

It is better not to use premium olive oil for cooking.

That is too generalized.

Extra virgin olive oil can generally also be used for cooking.

The scientifically more interesting question is:

What changes when it is heated?

Because something definitely happens.

Heat can:

  • alter volatile aroma compounds
  • reduce or convert phenolic compounds
  • influence oxidation processes

The extent of these changes depends, among other things, on:

  • Temperature
  • Duration
  • Cooking technique
  • Initial quality
  • Phenolic profile
  • Fatty acid composition
  • Food matrix
  • Reuse of the oil

A study under household conditions showed, for example, significant losses of certain phenolic compounds at 120 and 170 degrees Celsius, respectively.

This means:

Heating changes a high-quality oil.

It does not mean:

Heating makes extra virgin olive oil fundamentally unsuitable or dangerous.


Olive oil for frying | Stability and aroma are two different questions

Due to its fatty acid profile and natural accompanying substances, olive oil possesses an interesting oxidative stability.

Studies on frying conditions show that olive oils can be quite stable in these instances.

Current research from 2026 also explicitly investigates frying with extra virgin olive oil.

In this process, phenolic compounds decrease significantly over repeated frying cycles.

That is not surprising.

But:

Degradation of individual polyphenols is not the same as "this oil must not be heated."

Therefore, I separate two questions:

Technical question

Can I use extra virgin olive oil for cooking or frying?

Yes.

Culinary question

Do I want to heat a particularly rare, complex, and aromatic oil strongly for a long time?

Maybe not.

Not because it would be forbidden.

But because I want to experience exactly the fresh aromas for which I chose this oil.

In that case, I might use it:

  • as a finish
  • over vegetables
  • on fish
  • on pasta
  • over legumes
  • or raw

That is a decision of quality and enjoyment | no need to fear the pan.

Heating olive oil | Stability, polyphenols, and quality explained

Olive oil for frying | What you should keep in mind


The smoke point alone also does not answer the question

When it comes to cooking oils, only one figure is often compared:

the smoke point.

That, too, is insufficient.

The stability of an oil when heated is not determined solely by the moment visible smoke appears.

Relevant factors include, among others:

  • Fatty acid composition
  • Oxidation state before heating
  • Temperature
  • Time
  • Antioxidant accompanying substances
  • Repetition cycles

An already old and highly oxidized oil starts in the pan under different conditions than a fresh and well-stored oil.

Heat stability therefore begins even before cooking.


Mistake 4 | Storing olive oil incorrectly

Here the core of the old article remains correct.

Light.

Heat.

Oxygen.

Time.

These factors influence the development of an olive oil.

What is interesting is:

The European marketing standard even requires that it be indicated on the container or label that olive oil must be kept:

protected from light and heat.

This is not a marketing tip.

It is professionally and regulatorily anchored.


The space right next to the stove | Practical, but not ideal

I understand why there are so many bottles there.

You need the oil when cooking.

So it stands right next to the pan.

However, a constant heat source is unfavorable for long-term storage.

The same applies to:

  • sunny windowsills
  • space above the oven
  • radiators
  • permanently brightly lit surfaces

A high-quality bottle won't go bad in a matter of minutes.

What is problematic is:

the repeated exposure over weeks and months.


Protection from light | A dark bottle is good, but no magic shield

Dark glass can block light better than clear glass.

Suitable metal containers prevent direct light exposure even more consistently.

Modern bag-in-box systems can also offer advantages, especially with larger containers, because less air space can form when dispensing.

Current research under simulated household conditions confirms that packaging can significantly influence oxidative stability.

But:

Even a dark bottle should not stand in direct sunlight for months.

Packaging protects quality.

It does not create it.


Oxygen | Why container size is more important than many think

After opening, air gets into the bottle.

With increasing use, the ratio turns from:

a lot of oil + a small air gap

slowly into:

a little oil + a large air gap.

Older storage studies clearly show that increased oxygen exposure can accelerate the degradation of various natural components.

That is why, for larger containers, I don't just ask customers:

How much does the liter cost?

But rather:

How quickly do you use up this container?

A 5-liter container can be perfect for a household with high consumption.

For someone who uses two tablespoons a week, it might not be.

The best container size depends on the individual.

Storing olive oil correctly | Light, heat and oxygen


Does olive oil need to go in the fridge?

No.

But the opposite claim:

Olive oil must never be kept in the fridge

is scientifically too sweeping.

Studies show that low storage temperatures can even help preserve certain quality characteristics over a long period.

For normal daily use, however, fridge storage is usually impractical.

At low temperatures, olive oil can:

  • become cloudy
  • partially crystallize
  • become more viscous

This does not automatically mean that it has spoiled.

For most households, the following is sufficient:

a dark, rather cool cupboard away from permanent heat sources.


The fridge test | Not an authenticity test

One particularly persistent myth is:

Put the olive oil in the fridge.

If it turns solid, it's real.

If it stays liquid, it's fake.

That is not how evaluating olive oil works.

Crystallization behavior depends on the individual composition of the oil.

Therefore, a fridge cannot replace:

  • a laboratory
  • a sensory panel
  • an authenticity procedure

Mistake 5 | Using price, origin or appearance as proof of quality

This mistake appears in several variations.

Expensive = good.

Cheap = fake.

From only one country = good.

A blend of countries = bad.

Deep green = high quality.

Extremely pungent = premium.

None of these equations work reliably.


Inexpensive olive oil is not automatically adulterated

Olive oil fraud does exist.

Scientific literature on authenticity therefore deals intensively with:

  • admixture of cheaper oils
  • incorrect labeling of categories
  • incorrect origin
  • analytical methods for authentication

This is a real issue.

But it should not lead to the conclusion:

A low price proves fraud.

Price depends on many factors.

For example:

  • crop yield
  • olive variety
  • production costs
  • mechanization
  • packaging
  • logistics
  • profit margins
  • brand
  • marketing
  • distribution

An inexpensive oil can be legal and authentic.

And an expensive bottle is not automatically extraordinary.

Price is a context signal | not a lab result.

The difference between good and cheap olive oil


Blends of countries | Also not automatically inferior

Here, too, European law is clear.

For extra virgin olive oil and virgin olive oil, correctly labeled blends are possible, for example as:

  • a blend of olive oils from the European Union
  • a blend of olive oils from third countries
  • a blend of olive oils from the European Union and third countries

A blend of different countries of origin is therefore:

not automatically an adulteration.

It is a permissible product form if the category and labeling are correct.

Personally, at Green Agora, I am often interested in products with a clear identity of producer, variety and region.

Why?

Because I want to understand the bottle more precisely.

But that is a different statement than:

Only single-origin can be quality.

My basic rule is:

Origin creates conditions. The producer must turn them into quality.


Refined oil | Here you have to read the category

The old article stated that inexpensive olive oils could contain "a proportion of refined oil."

Without explanation, this is misleading.

The EU distinguishes between different legal olive oil categories.

For example:

  • Extra virgin olive oil
  • Virgin olive oil
  • refined olive oil
  • olive oil composed of refined olive oils and virgin olive oils
  • olive pomace oil

A product in the legal category:

Extra virgin olive oil

may not simply contain legal refined olive oil and still be sold as extra virgin olive oil.

In contrast, there is an explicit category for:

Olive oil | composed of refined olive oils and virgin olive oils.

In this product category, the combination is not fraud.

It is the defined composition of the product and must be labeled accordingly.

Therefore, always read the exact sales designation first.


Color | One of the worst home tests for quality

Olive oil can be:

intense green.

light green.

yellow-green.

golden yellow.

.

The color is influenced by, among other things:

  • olive variety
  • degree of ripeness
  • pigments
  • processing
  • storage

That is why professional sensory testing glasses traditionally use a color that prevents the look of the oil from influencing the sensory evaluation.

A deep green oil is not automatically higher quality.

And a golden-yellow oil is not automatically old.


Bitterness and pungency | Positive, but not a competition

In virgin olive oil, bitterness and pungency are important positive sensory attributes when they appear in a fruity and defect-free profile.

But that does not mean:

The more bitter, the better.

Or:

The more the throat burns, the higher the quality.

Olive varieties differ.

Harvest times differ.

People differ.

A mild, harmonious olive oil can be excellent.

An extremely intense olive oil can be, too.

Intensity and quality are not the same thing.


What about laboratory analyses?

I like analyses.

A lot, actually.

They can make a bottle much easier to understand.

Depending on the question at hand, interesting parameters include, for example:

  • free acidity
  • peroxide value
  • UV parameters
  • fatty acid ethyl esters
  • sterols
  • fatty acid profile
  • total polyphenols
  • oleocanthal
  • oleacein

But here too, the following applies:

An analysis without context is just a number.

For specific product values, I want to know:

Product | Harvest | Batch | Analysis | Method | Date.

And even then, the laboratory report does not fully explain how a person experiences the oil sensorially.


Ayhan's 30-second check before buying

If you don't want to read a scientific treatise in the store, a quick check is sufficient to start with.

1 | Which category am I buying?

Does it actually say:

Extra virgin olive oil?

2 | What do I learn about the origin?

One country?

A region?

A producer?

Or a correctly declared blend?

3 | Is there information about the harvest?

If a harvest year is specified, it can be valuable information regarding freshness.

4 | How is the oil protected?

Bottle, metal container, bag-in-box or other packaging?

How much light is the product exposed to?

5 | Does the container size fit my consumption?

500 ml in four weeks?

Or 5 liters in one year?

These are two completely different situations.

6 | Do I understand who is behind the bottle?

Producer.

Variety.

Region.

Style.

Sensory profile.

This information helps me much more than a golden label.


My actual quality rule | No single feature decides

I am often asked:

"Ayhan, how do I immediately recognize the best olive oil?"

The honest answer:

by not a single feature.

Not by price.

Not by color.

Not by the country of origin.

Not by acidity.

Not by the polyphenol count.

Not by pungency.

Not by the organic seal.

Not even by the quality grade alone.

I want to understand the big picture.

Which olive?

Which region?

Which producer?

Which harvest?

How was it processed?

How was it stored?

How does the oil smell and taste?

What analyses are available?

And then comes the second half:

Who is intended to use this oil?

A person cooking daily for a family of five might need a different oil and container than someone using 500 ml exclusively as a finishing oil over several months.

One person loves strong bitterness.

Another wants a more harmonious profile.

Both are possible.

Understand the olive oil. Understand the person. Bring both together.

Is extra virgin olive oil always high quality?

Extra virgin olive oil is a legally defined highest category of virgin olive oils and must meet corresponding chemical and sensory criteria. Within this category, quality, style, freshness and sensory profile can still vary significantly.

Can you heat high-quality olive oil?

Yes. Extra virgin olive oil can be used for cooking and frying. However, heat affects aromas and various phenolic compounds. With particularly complex oils, using them as a finish can therefore make culinary sense.

Do I need to use a different oil for high-heat searing?

Not necessarily. Temperature, duration, reuse, and initial quality are more important than the blanket rule that olive oil should not be used in the pan.

Must olive oil be stored in the dark?

It should be protected from light and heat. This exact storage instruction is also stipulated in the European marketing standard.

Does olive oil need to go in the fridge?

For the average household, no. A dark and relatively cool cupboard is usually more practical. Low temperatures can cause clouding or crystallization, which in themselves do not prove spoilage.

Is a fresh harvest year always better?

Freshness is fundamentally valuable. However, the actual quality also depends on the raw material, processing, packaging, and storage. A harvest year alone does not prove premium quality.

Must the harvest year be on the bottle?

Not generally. Under EU law, the indication is voluntary under certain conditions, or it may be mandated nationally for specific domestic oils. If it is used, the contents must originate entirely from the stated harvest.

Is cheap olive oil automatically faked?

No. Price alone can neither prove nor disprove authenticity.

Are olive oils from multiple countries bad?

No. European law explicitly provides for correctly declared blends of different EU or non-EU origins. A blend of countries is therefore not automatically an adulteration.

Can extra virgin olive oil contain refined olive oil?

Not legally under this quality designation. A separate legal category and labeling exist for blends of refined and virgin olive oil.

Is green olive oil better?

No. Color is not a reliable proof of quality.

Is very pungent olive oil automatically better?

Is a low acidity level the best quality test?

Actually, always the same thing.

Olive oil is explained in a problematic way as soon as a piece of advice becomes a dogma.

Freshness is important.

But a new harvest does not make poor processing good.

Extra virgin olive oil is an important quality grade.

But two oils of this category can be worlds apart.

Pungency can be fascinating.

But extremely pungent does not automatically mean extremely good.

A high price can reflect production effort.

But it is not a quality certificate.

And extra virgin olive oil can be heated.

Sometimes I choose not to, consciously, because I prefer to experience a special aroma unchanged.

For me, that is the difference between:

Memorizing rules

and:

Understanding olive oil.
