Olive Oil for Frying | Temperature, Smoke Point and EVOO
Can you fry with olive oil?
This is one of the most common questions I am asked at Green Agora.
And there is hardly any other culinary topic around which so many contradictory rules exist.
Some say:
Extra virgin olive oil must never get hot.
Others say:
In the Mediterranean region, people have been cooking and frying with olive oil for generations.
Both observations contain a part of the story.
The scientifically correct answer is:
Yes | Extra virgin olive oil can be used for frying and cooking.
But temperature, duration, reuse, initial quality, and the culinary goal influence what happens to the oil during heating.
Heat changes olive oil.
It changes:
- Aroma compounds
- phenolic compounds
- oxidation products
- sensory characteristics
But this does not mean:
Olive oil suddenly becomes unsuitable in the pan.
For me, therefore, one must distinguish between two questions.
Can I fry with a high-quality extra virgin olive oil?
Yes.
Do I want to heat every exceptional premium olive oil for a long time at a high temperature?
Not necessarily.
The latter is often a question of aroma, usage, and also price.
In this article, we therefore take a closer look at smoke point, temperature, oxidative stability, polyphenols, deep-frying, and the question of which olive oil is really suitable for which application.

Olive oil for frying | The most important answers first
| Can you fry with olive oil? | Yes. Olive oils with a high oleic acid content in particular show good oxidative stability. Extra virgin olive oil can also be used in the pan at a reasonable temperature. |

| Should the oil smoke? |
Can you really heat extra virgin olive oil?
Yes.
The idea that extra virgin olive oil is exclusively a cold salad oil is too simplistic.
Extra virgin olive oil consists mainly of triacylglycerols.
Its fatty acid profile is typically dominated by:
Oleic acid
Oleic acid is a monounsaturated fatty acid.
Oils with a high proportion of monounsaturated fatty acids are generally less sensitive to oxidation when heated than oils with very high proportions of polyunsaturated fatty acids.
In addition, extra virgin olive oil contains various natural accompanying substances.
Among others:
- phenolic compounds
- tocopherols
- pigments
- other minor components
Some of these substances can contribute to oxidative stability.
But here, too, it applies:
Not every extra virgin olive oil possesses the same stability.
Olive variety.
Fatty acid profile.
Phenol profile.
Freshness.
Storage.
And processing.
They all influence the starting point.
Extra virgin olive oil | What the quality grade really means
Extra virgin olive oil | A legal quality grade, not a "use only cold" warning
Extra virgin olive oil is a legally defined olive oil category in the European Union.
The applicable quality requirements include, among others:
- free acidity maximum 0.80 percent
- peroxide value maximum 20.0 mEq O2/kg
- K232 maximum 2.50
- K268 or K270 maximum 0.22
- ΔK maximum 0.01
- median of defects 0
- median of fruitiness greater than 0
In addition, there are further analytical requirements.
However, the quality grade does not mean:
This oil must only be used cold.
That is not a property of the legal category.
What does the smoke point mean?
The smoke point is the temperature at which a heated fat or oil visibly begins to smoke.
It is often used as a simple boundary:
Below the smoke point = good.
Above the smoke point = bad.
As an orientation, the smoke point is useful.
As a complete assessment of heat stability, it is too simple.
A recent study from 2025 examined 48 extra virgin olive oils and showed that the smoke point depends on several chemical properties.
Especially important was:
the content of free fatty acids.
The higher the free fatty acids, the lower the smoke point tended to be.
Other parameters also influenced it.
The authors also point out that the classic determination of the smoke point has a subjective visual component.
For me, this means:
The smoke point is a parameter | not the entire science of the pan.
Why there is no single smoke point for "olive oil"
On the internet, you can find tables that state:
Olive oil = exactly X degrees.
Extra virgin olive oil = exactly Y degrees.
This apparent precision is problematic.
Olive oils differ in:
- free fatty acids
- oxidation state
- fatty acid profile
- phenol profile
- processing
- age and storage
Therefore, the smoke point can vary between different oils of the same category.
The measuring method also plays a role.
I would therefore never decide whether a specific olive oil is suitable for frying based on a single number from the internet.
What temperature when frying with olive oil?
For the kitchen, a simple rule of thumb helps:
As hot as necessary | not hotter than sensible.
The consumer advice center cites as a guide:
about 130 to 140 °C when frying
and:
about 160 to 170 °C when deep-frying.
Such numbers are reference points.
In a real pan, the temperature is not identical everywhere and changes immediately when food is added.
Therefore, practical observation is at least as important.
If oil is smoking heavily and continuously:
Reduce temperature.
Very high temperatures do not automatically cook food better.
Instead, they accelerate chemical changes in the oil.
Frying, sautéing, and deep-frying are not the same
When someone asks:
“Can I fry with olive oil?”
I actually have to ask back:
What exactly do you want to do?
Gentle searing
Vegetables.
Onions.
Garlic.
Fish.
Other ingredients at a moderate temperature.
Here, extra virgin olive oil can work excellently.
Sautéing
Brief cooking or tossing at a higher temperature.
EVOO can also be used here.
However, the hotter and longer you work, the more its aroma profile changes.
Deep-frying
The food is surrounded by hot oil.
Here, larger amounts of oil are brought to temperatures around 160 to 180 °C over a longer period.
For this application, cost-effectiveness, reuse, and stability are particularly important.
A very precious and highly aromatic premium EVOO is technically possible.
Economically and culinarily, however, it may not be the most sensible decision.
What happens to polyphenols during frying?
Polyphenols do not disappear the moment a pan gets warm.
But they are also not completely heat-stable.
Temperature and duration change different phenolic compounds differently.
A domestic-style study from 2020 examined a Hojiblanca EVOO at:
120 °C and 170 °C.
Under the specific test conditions, the measured polyphenol content decreased compared to the unheated oil by approximately:
40 percent at 120 °C
and:
75 percent at 170 °C.
These numbers are interesting.
But please do not conclude:
Every olive oil loses exactly 75 percent of its polyphenols at 170 °C.
That would be wrong.
Other oils.
Other phenol profiles.
Other foods.
Other time.
Other cooking technique.
Other results.
A study shows a mechanism and an order of magnitude | not a universal cooking formula.
2026 | What current research shows about deep-frying with EVOO
A study published in 2026 examined Picual and Arbequina EVOO during successive frying cycles.
Different foods were used.
The phenolic compounds decreased significantly in the oil.
Interestingly, the loss was dependent on the food.
With non-breaded foods, the decline in this study was in part approximately:
93 percent.
With breaded foods, it was between approximately:
70 and 78 percent.
Potatoes also behaved differently than some other non-breaded foods.
This shows something very important:
When cooking, it is not just the oil that reacts.
Oil and food form a chemical system.
Water.
Proteins.
Starch.
Breading.
Temperature.
All these factors influence the development.
Polyphenols can also be transferred to the food
Cooking does not only mean:
Component X is destroyed.
Substances can also migrate between oil and food.
Studies with Mediterranean vegetables show that when frying or sautéing with EVOO, certain phenolic compounds from the olive oil can become detectable in the cooked vegetable.
Other plant-specific substances also change.
Therefore, the chemistry of a finished dish is more complex than the analysis of the oil alone.
The pan is not a simple subtraction machine.
The science of the stability of olive oil | Polyphenols, heat, and quality
What happens to the aroma?
For me, this question is at least as important for premium olive oil as the polyphenol question.
The fresh aroma of an extra virgin olive oil comes from numerous volatile compounds.
These can be reminiscent of:
- freshly cut grass
- tomato leaf
- artichoke
- herbs
- green almond
- apple
- flowers
- other variety-typical aromas
These volatile compounds are sensitive to heat.
A 2024 study examined monovarietal EVOOs at:
180 °C and 220 °C.
With higher temperature, changes in phenolic and volatile compounds increased.
A part of the original substances was nevertheless preserved.
For me, this is the culinary key.
An oil can be technically suitable for frying and yet be sensorially too precious for long, high-heat cooking.
An exceptional premium olive oil | Pan or finish?
When I have a very characterful olive oil, I ask:
Why did I buy this bottle?
Because of its:
- olive variety?
- fruitiness?
- bitterness?
- pungency?
- aromatics?
- origin?
- analysis?
If the oil is particularly interesting because of its aroma, I can work in two stages.
For example:
Cook with olive oil.
And afterwards:
add a small amount of a particularly aromatic EVOO fresh over the finished dish.
That is how I use olive oil in both roles.
As a cooking medium.
And as a seasoning.
Is refined olive oil better for frying?
The word:
better
is also too absolute for me in this context.
Refined olive oil possesses different properties than extra virgin olive oil.
Through refining, among other things, free fatty acids, aroma compounds, and various accompanying substances are significantly altered or removed.
The result is typically:
- a more neutral taste
- fewer natural phenolic accompanying substances
- frequently a higher or less variable smoke point
- often a lower price
For very frequent or long deep-frying, a refined oil can therefore be practical.
The German Nutrition Society also points out that refined vegetable oils are particularly suitable for high temperatures and that cold-pressed oils can be less practical when deep-frying.
This does not contradict the studies that show good oxidative stability of extra virgin olive oils when deep-frying.
These are two different perspectives.
Technical stability.
And:
practical household recommendation considering smoke point, cost, and aroma.
Virgin olive oil as a frying oil | What reviews show
An extensive scientific review of virgin olive oil as a frying oil reaches an interesting classification.
Under frying conditions, olive oil behaved in many examined situations:
comparably or better than refined vegetable oils.
One reason for this is its fatty acid profile.
Oils rich in oleic acid are generally more oxidatively stable than oils that are very polyunsaturated.
Added to this are natural accompanying substances of extra virgin olive oil.
An older direct comparative study examined different olive oil categories under long-lasting frying conditions.
The examined olive oils withstood the test conditions longer than a commercial vegetable oil blend that was used.
This does not mean:
EVOO is always and in every situation the best frying oil.
But it clearly shows:
The claim "olive oil is not heat-stable" is scientifically untenable.
Why the fatty acid profile is important when frying
Fatty acids differ in the number of their double bonds.
Simplified:
Saturated fatty acids possess no double bond.
Monounsaturated fatty acids possess one.
Polyunsaturated fatty acids possess several.
The more double bonds present, the more potential attack points exist fundamentally for oxidative reactions.
Olive oil typically possesses a high proportion of:
monounsaturated oleic acid.
This is one of the reasons for its comparatively good thermal stability.
But the fatty acid profile also varies between varieties and products.
Early harvest | Automatically better for frying?
No.
Here too, an automatic rule would be too simple.
For certain varieties and conditions, early harvested olives can lead to oils with higher concentrations of specific phenolic compounds.
These compounds can, in turn, contribute to oxidative stability.
Studies also show correlations between the phenol profile and oxidative stability.
But:
Early harvest is not an automatic guarantee of quality or suitability for frying.
Decisive factors remain:
- olive variety
- state of ripeness
- processing
- phenol profile
- fatty acid profile
- storage
- freshness

Can you use very spicy and phenol-rich olive oil for frying?
Yes.
But again the question arises:
Why did I buy this oil?
An intensely phenolic oil can possess high oxidative stability.
At the same time, the very compounds that are analytically and sensorially interesting can be partially broken down during intense or prolonged heating.
If I like an oil because of its distinct throat-catching sensation, its bitterness, or its special aroma, it may therefore make sense to use at least a portion:
only after cooking, added fresh.
This is not a safety rule.
It is a decision based on enjoyment.
Polyphenols in olive oil | Taste, analytical values, and EU Health Claim
The EU Health Claim does not belong in the frying pan
The old article linked the topic of frying directly with the authorized EU Health Claim for olive oil polyphenols.
Today, I would no longer use that as a sales argument for heated olive oil.
The authorized claim has specific analytical requirements for the oil in question.
Heat can precisely alter the relevant phenolic compounds.
Therefore, one should not automatically turn:
The unheated product potentially meets the requirements of a claim
into:
The amount of oil remaining after long frying meets the same analytical conditions.
That would have to be looked at analytically.
For the decision to fry, it is sufficient that:
Olive oil possesses a favorable fatty acid profile and can be thermally stable.
We don't need any additional health claim story for that.
Heating oil multiple times | Here it becomes more important than the question of EVOO or not
One-off, short frying is different from:
Heating oil.
Letting it cool down.
Heating it again the next day.
Cooling it down again.
And repeating this process many times.
With repeated heating, various oxidation products increase.
A 2025 study examined different oils over up to ten frying cycles at:
150 °C and 190 °C.
Oxidative change increased with the frying cycles and was stronger at 190 °C.
Changes also occurred with olive oil.
However, it showed comparatively good stability in several examined parameters.
For me, the important practical message is:
Temperature and reuse count.
How often can you reuse frying oil?
A universal number like:
exactly three times
is not scientifically sound.
The strain depends on:
- temperature
- duration
- food
- water content
- breading
- residues in the oil
- oil composition
- storage between uses
For the private household, I would choose a simple conservative line.
Do not bring oil back to high temperatures unnecessarily often.
Especially not when it:
- becomes significantly darker
- smells unpleasant
- foams strongly
- becomes unusually viscous
- smokes at lower and lower temperatures
These are practical warning signs.
However, they do not replace an analytical determination of the actual state of oxidation.
Why food residues in the oil are problematic
When deep-frying, small food particles remain in the oil.
Breading.
Starch.
Proteins.
Spices.
These residues can continue to react or burn upon reheating.
Anyone who reuses frying oil at all should therefore remove solid residues.
But that does not change the basic rule:
Every additional intensive heating cycle alters the oil further.
Olive oil for searing meat?
Yes, fundamentally possible.
But "searing" is often confused in private kitchens with:
maximum stove setting until everything smokes.
That is not necessary.
For good browning, a sufficiently hot pan is important.
However, the oil does not need to smoke heavily for a long period for this.
If a particularly aromatic EVOO is used, you must also expect that some of its delicate aroma will be lost due to the high temperature.
Olive oil for vegetables | One of my favorite uses
Extra virgin olive oil works particularly well for vegetables.
Not only technically.
Also culinarily.
Zucchini.
Eggplant.
Tomato.
Bell pepper.
Onion.
Fennel.
Mushrooms.
Legumes.
Many aromas of the olive oil can become part of the dish.
Therefore, I don't have to choose between:
cooking
or:
good olive oil.
I can intentionally integrate a suitable oil into my cooking.
Which olive oil is suitable for frying?
I wouldn't automatically look for the highest polyphenol value.
And also not for the most expensive oil.
I would first ask:
What would you like to cook?

Does a frying olive oil have to taste mild?
No.
But taste is part of the decision.
A robust oil with clear:
- fruitiness
- bitterness
- pungency
can intentionally shape a dish.
A milder olive oil integrates more reservedly.
Both can be correct.
At Green Agora, advice therefore does not mean:
We need the strongest oil.
But:
We need the suitable oil.
Is a cheaper olive oil automatically better for the pan?
No.
Price is not a stability parameter.
A cheaper oil can be excellently suited for frying.
A more expensive one just as well.
The price alone says nothing about:
- oxidation state
- fatty acid profile
- phenol content
- freshness
- sensory quality
However, for me, an economic consideration comes into play.
If I need large amounts of oil for deep-frying, I have to consider whether the fine sensory properties of a very expensive premium EVOO would even come into their own there.
That is not a question of quality.
It is a question of sensible usage.
