Two completely different worlds.
And yet they have something in common.
From the outside, it is often difficult to judge exceptional quality.
A beautiful bottle does not prove exceptional olive oil.
A golden honey does not prove a special botanical origin.
A high price does not automatically prove top quality for either product.
And many supposed kitchen tests provide significantly less certainty than is often claimed on the internet.
That is why I start with the same fundamental questions for both products:
- Where does it come from?
- Who is behind it?
- How was it produced?
- Which information is legally required?
- What additional quality information does the provider disclose voluntarily?
- What analyses are available?
- And can I trace what I am actually buying?
After that, the two worlds diverge.
For olive oil, the following are added:

- Chemical quality parameters
- Purity criteria
- Sensory profile
- Phenolic profile
For honey, on the other hand, I am particularly interested in:
- Botanical origin
- Geographical origin
- Honey type
- Water content

For me, premium does not begin with the design.
Premium begins with verifiable product quality.
And the more heavily a product is advertised, the more important the question becomes for me:

Why I evaluate olive oil and honey differently
Olive oil and honey are natural products.
But they are created in completely different ways.
Olive oil is extracted from olives.
The fruits are harvested and mechanically processed.
Honey, on the other hand, is created by the work of honey bees.
The bees collect:
- Nectar from plants
- Secretions of living parts of plants
- Or excretions of plant-sucking insects on living parts of plants
They collect these, transform them with their own bodily substances, store them, extract water, and allow them to mature in the beehive.
Therefore, it would be technically incorrect to apply the same quality criteria to both products.
Both products require transparency.
But transparency must be product-specific.
Premium Olive Oil | What does "premium" mean to me?
Premium is not a separate legal quality grade for olive oil.
Therefore, this term should not simply be written on a bottle and left to its own devices.
For me, premium must be explainable.
I want to know:
- Which olive variety?
- Which origin?
- Which harvest?
- Which producer?
- How was it produced?
- How does the olive oil smell?
- How does it taste?
- What analyses are available if specific values are used?
For me, premium is not just a single word.
It is the sum of verifiable characteristics.

Extra Virgin Olive Oil | The legal basis
When I select high-quality olive oil, I start with the grade.
The correct designation is:
Extra virgin olive oil.
This is the highest category among virgin olive oils.
To qualify, defined analytical and sensory requirements must be met.
Central current quality characteristics include, among others:

Different varieties can develop different sensory and analytical characters.
That is why I find it wrong to make a single flavor profile the benchmark for all high-quality olive oils.
One olive oil can be bolder.
Another more harmonious.
One very green and bitter.
Another with a completely different aromatic structure.
Quality does not mean uniformity.

Many premium olive oils are produced from olives harvested comparatively early.
Depending on variety, ripeness, and vintage, this can be associated with:
- Intense green aromas
- Distinct bitterness
- Pungency
- Interesting or high concentrations of certain phenolic compounds
- Lower oil yield
But:
Early harvest alone does not guarantee an excellent olive oil.
The olives must be healthy.
Transport and processing must be correct.
And afterwards, the existing quality must be properly protected.

If I want to understand a bottle, I taste it.
I smell it first.
Then I taste it.
I am interested in:
- Fruitiness
- Aromatics
- Bitterness
- Pungency
- Balance
- Finish
A high-quality olive oil does not have to be maximally bitter.
It does not have to be maximally pungent.
And it does not have to be the oil with the highest analytical value.
Intensity and quality are not the same thing.
For extra virgin olive oil, sensory evaluation is even part of the legal categorization.
For this category:
- The median of defects must be 0
- And fruitiness must be present
Sensory evaluation is therefore not a decorative addition.
It is part of professional quality assessment.
Polyphenols | Important, but not the entire bottle
Polyphenols are one of the topics I deal with particularly intensively for certain premium olive oils.
They can be measured analytically.
But a single total figure does not automatically describe:
- The complete phenol profile
- The entire sensory profile
- The entire chemical quality
- The authenticity
When specific values are communicated, I therefore want to know:
- Which harvest?
- Which product?
- Which sample?
- Which analytical method?
- What time of analysis?

Honey | What does "real" honey actually mean?
With honey, I encounter a similar question as with olive oil.
How do I recognize real honey?
First of all, the legal definition helps here.
Honey is a natural product produced by honey bees from plant raw materials and ripened in the beehive.
Particularly important is:
No substances other than honey may be added to honey.
This means:
If sugar, syrup, flavorings, or other food components are added, such a product simply does not meet the legal definition of honey.
Thus, the basic rule is very clear.
More difficult is the question:
How do you recognize possible adulteration?
This is exactly where simple kitchen tests are not enough.
Since June 14, 2026 | Honey origin becomes significantly more transparent
For consumers in Germany, the origin labeling of honey has changed significantly.
Since:
June 14, 2026
significantly more concrete labeling applies to honey blends.
If honey originates in more than one country, the countries of origin must be stated:
- In the main field of vision
- In descending order of their weight percentage
- And together with the respective percentage weight share
For the individual portion of the blend, a tolerance range of:
5 percent
is permissible based on the company's traceability records.
For packages containing less than:
30 g of honey
the country names can be replaced by the corresponding two-digit country codes.
For me, this change is a major step forward.
Because instead of a very general statement of origin, the consumer can see much more precisely which countries a blend comes from.
Also important is the transitional rule:
Honey produced and labeled in accordance with the regulations in force before 14 June 2026 may continue to be sold until stocks are exhausted.
Honey type | Botanical origin cannot be claimed arbitrarily
For honey, the botanical origin is particularly fascinating.
Thyme.
Acacia.
Lavender.
Chestnut.
Blossom honey.
Honeydew honey.
Such terms describe different products.
In Germany, the designation of a honey may be supplemented by information regarding the blossom or plant origin if the honey:
comes entirely or predominantly from the stated botanical source
and exhibits the corresponding:
- sensory
- physicochemical
- and microscopic characteristics.
A regional, territorial, or topographical origin may also be indicated if the honey:
comes exclusively from this stated origin.
A botanical or geographical indication of origin is therefore more than just a nice product name.
Honey has legal quality parameters
With honey, one often only hears:
real.
natural.
from the beekeeper.
crystallized.
But honey actually has concrete legal requirements regarding its composition.
Central parameters include:
- sugar composition
- water content
- water-insoluble substances
- electrical conductivity
- free acids
- HMF
- diastase
This means that honey is also analytically much more complex than a simple spoon test would suggest.
Water content in honey | Why this value is important
In general, a maximum water content applies to honey of:
20 percent.
For certain special cases, different limits apply.
The water content can be relevant for:
- storage stability
- consistency
- and tendency to ferment.
But here, too, the following applies:
A low water content alone does not prove botanical origin or complete authenticity.
It is an important quality parameter within a broader overall picture.
Sugar profile | Honey naturally consists predominantly of sugar
Honey naturally consists to a large extent of various types of sugar.
Particularly important are:
- fructose
- glucose
- sucrose
For blossom honey, the sum of fructose and glucose must generally be at least:
60 g per 100 g.
For honeydew honey as well as mixtures of honeydew and blossom honey, the minimum quantity is generally:
45 g per 100 g.
For the sucrose content, there is generally a maximum limit of:
5 g per 100 g.
Different limit values apply to certain botanical honey types.
The sugar profile is therefore analytically important.
However:
Modern adulteration with added syrups can be analytically much more complicated than just looking for an unusually high total sugar content.
HMF | An important honey parameter
HMF stands for:
hydroxymethylfurfural.
The HMF content can be influenced by, among other things:
- heating
- storage
- time.
For honey, with the exception of baker's honey, there is generally a maximum limit of:
40 mg per kg.
For honey with a declared origin from regions with a tropical climate and corresponding mixtures, there is generally a maximum limit of:
80 mg per kg.
HMF is therefore a very interesting quality parameter.
But HMF alone is not a complete authenticity test either.
Diastase | Why enzyme activity is interesting in honey
Diastase activity is also one of the legal quality criteria for honey.
In general, the diastase number according to Schade must be at least:
8.
For honeys with a naturally low enzyme content, other values apply under certain conditions.
For example, for a corresponding honey with an HMF of at most:
15 mg per kg,
a diastase number of at least:
3
may apply.
Here, too, it is evident: honey quality can be examined very specifically from an analytical perspective.

Does real honey always crystallize?
No.
Crystallization is a natural process.
However, speed and characteristics can differ considerably between different honeys.
The ratio of different types of sugar plays an important role, among other things.
One honey may crystallize relatively quickly.
Another may remain liquid for significantly longer.
Therefore, the statement:
Only crystallized honey is real
is too simple.
And it would be just as wrong to say:
Liquid honey is automatically inferior.
Consistency is a product characteristic.
Not a sole proof of authenticity.
Color of honey | Darker does not automatically mean better
Honey can have very different colors.
Almost colorless.
Golden yellow.
Amber.
Dark brown.
The color can be closely linked to the botanical origin.
But even here, I would not create a simple quality ranking.
Dark honey is not automatically of higher quality.
Light honey is not automatically inferior.
The color is part of the character of the product.
It is not a complete seal of quality.

Honey is sensorially much more diverse than many people expect.
Depending on the botanical origin, completely different:
- aromas
- intensities
- sweetness impressions
- tart notes
- finishes
can emerge.
That is why, here too, I am not only interested in:
Is it honey?
But rather:
- What kind of honey?
- What origin?
- Which beekeeper or producer?
- How does the honey taste?
- How does it smell?
- What specific product history can be traced?
With honey, too, product knowledge begins where we look behind the general term.
Natural | A quality word needs concrete explanation
With honey, terms like:
natural
are often used.
For me, it should then be understandable what is specifically meant by that.
For example:
- How was the honey obtained?
- How was it treated?
- How was it stored?
- Who is behind the product?
- What origin is documented?
The more strongly a quality term is used, the more it should be filled with concrete information.
This applies to premium olive oil just as much as it does to premium honey.
The water test for honey | Why I do not use it as proof of authenticity
On the internet, it is often recommended to put a spoonful of honey into water.
Then it is claimed:
Real honey stays together and adulterated honey dissolves immediately.
This is not a way to carry out a reliable authenticity check.
Behavior in water can be influenced by:
- water content
- sugar ratio
- temperature
- state of crystallization
- viscosity
The water test is not a reliable proof against added sugar syrups.
The same applies to:
- spoon tests
- flame tests
- paper tests
- thumb tests
Such tricks may show physical properties.
They cannot replace complex food analysis.
Can you taste honey adulteration?
Not reliably.
Sensory analysis can show a lot.
It can provide clues to:
- aroma
- intensity
- off-notes
- consistency
- botanical character
But a comprehensive authenticity check is something different.
A deliberately adulterated product can be designed to seem sensorially plausible.
Tongue and nose are valuable tools.
They are not a complete analytical laboratory.
Honey and laboratory analysis | Why authenticity can be analytically difficult
The analytical testing of honey is demanding.
The main reason is simple:
Honey naturally consists predominantly of sugar.
If foreign sugar syrups are added, the laboratory must therefore distinguish between:
- natural honey sugars
- and foreign sugar sources.
Depending on the type of syrup used, this can be particularly difficult.
In European control actions, various procedures were therefore combined.
These included, for example:
- document and traceability checks
- sensory testing
- pollen analysis
- sugar analysis
- isotope methods
- other advanced analytical methods
With honey, too, authenticity is therefore not a single magic value.
What the major EU honey inspection showed
A Europe-wide inspection campaign examined:
320 imported honey shipments from 20 countries.
The Joint Research Centre classified:
147 samples, or 46 percent,
as suspicious of potential non-conformity due to markers of foreign sugar sources.
This number is remarkable.
But it must be read correctly.
In this campaign, 46 percent did not mean 46 percent legally proven adulterations of the entire European honey market.
It was a targeted control campaign on imported shipments.
The advanced methods used identified suspicious samples that subsequently required further investigations and traceability checks.
Precisely this differentiation is important.
Why the EU is further developing honey analysis
With the reform of honey regulations, the European Union has not only changed the labeling of origin.
The Commission is also working on a stronger harmonization of:
- authenticity testing
- traceability
- evaluation of potential sugar additions
- pollen testing
- and criteria for gentle treatment
The current legal situation stipulates that further delegated acts on several of these topics are to be adopted by:
14 June 2029.
Until corresponding EU-wide harmonized implementing acts for certain methods are available, internationally recognized validated methods continue to play an important role.
Therefore, even in 2026, honey authenticity analysis is in a state of active further development.
Olive oil and honey | What connects both quality worlds
Although both products are created in completely different ways, I see several common principles.
- Origin: Where does the product come from?
- Producer: Who is behind it?
- Transparency: Can important questions be answered?
- Sensory: How does it smell and taste?
- Processing: How was the natural product handled?
- Storage: How was existing quality protected?
- Analysis: Which investigation is actually relevant for which claim?
- Traceability: Can the product and origin be traced?
And something else connects both:
A great marketing story is no substitute for product information.
Olive oil and honey | What explicitly does not connect both
The other side is just as important.
One should not try to transfer the same testing methods to both products.
A polyphenol value in olive oil says nothing about honey quality.
The crystallization of a honey says nothing about olive oil quality.
The extra virgin olive oil quality grade does not apply to a honey product.
HMF in honey is not the same as an oxidation parameter in olive oil.
And a botanical honey type says nothing about the sensory quality grade of an olive oil.
Good advice also begins with treating different products differently.
Buying premium olive oil and honey online | What I would look for
When buying online, you cannot immediately smell or taste.
That is why information becomes especially important.
I would look out for the following points:
- clear product designation
- traceable origin
- information about the producer or the responsible company
- understandable description of the product
- realistic quality claims
- no unsubstantiated miracle claims
- product-related analyses if advertising with specific measured values
- current origin labeling for honey
- clear contact options for questions
The less I can physically experience a product before buying it, the more important transparency becomes.

I am not looking for the biggest promise.
I am looking for the most coherent overall picture.

Can I use premium olive oil and honey together?
