Voliotis demonstrates particularly clearly how different olive oil can be from the same olive variety and the same region.
The Voliotis family produces three extra virgin olive oils from Amfissis olives in Pelion, Greece, which serve different purposes at Green Agora:
- Voliotis Early Harvest with currently 674 mg total polyphenols per kg
- Voliotis Extra with currently 418 mg total polyphenols per kg
- Voliotis Organic with currently 356 mg total polyphenols per kg
All three Voliotis variants offered by Green Agora are kosher certified.
In this way, Voliotis combines a traditional Greek olive variety with traceable origin, different sensory profiles, and a certification that can be particularly relevant for consumers, gastronomy, and gift recipients with kosher requirements.
Voliotis | The most important facts
- Producer: Voliotis family
- Origin: Pelion and Volos, Greece
- Production site: Ano Lechonia
- Olive variety: Amfissis
- Quality grade: extra virgin olive oil
- Kosher certification: available for the Voliotis olive oils offered by Green Agora
- Voliotis Early Harvest: 674 mg total polyphenols per kg
- Voliotis Extra: 418 mg total polyphenols per kg
- Voliotis Organic: 356 mg total polyphenols per kg
- Organic: only the specifically labeled organic variant
The three olive oils come from the same product family but should not be understood as three different quality levels.
They possess different sensory profiles and are therefore suitable for different tastes and uses.
Voliotis family | Olive oil tradition since 1969
The history of the Voliotis family dates back several decades.
The family's first olive mill began operations in 1969 in the village of Agios Vlasios in Pelion.
In 1981, production moved to larger facilities in Ano Lechonia.
There, the family continued to develop their production and invested in modern technology over the years.
This connection between regional tradition and current production is an important part of the Voliotis history.
For Green Agora, it is particularly interesting that it is not just a brand being marketed, but a concrete family, region, and olive variety behind the products.
Pelion and Volos | Where the Voliotis olive oils are created
Pelion is located in the Greek region of Thessaly near Volos, between a mountainous landscape and the Aegean Sea.
The region combines olive cultivation with a long agricultural tradition.
Of course, origin alone does not make an olive oil high-quality.
For actual quality, other factors work together:
- Olive variety
- Condition of the fruits
- Harvest time
- Processing
- Storage
- Sensory qualities
- Chemical quality values
What is particularly exciting about Voliotis, therefore, is that the same origin can be experienced in three different styles.
Amfissis | The olive variety behind Voliotis
All three Voliotis variants at Green Agora are produced from Amfissis olives.
Amfissis is a traditional Greek olive variety that can be used both as a table olive and for the production of olive oil.
The variety is widespread in various parts of Central Greece and is also cultivated in Magnesia, which includes the region around Volos.
Internationally, there are various regional names and synonyms for the variety.
For Green Agora, Amfissis is strategically particularly interesting because it expands our range beyond the better-known Koroneiki and Kalamon varieties.
Anyone who tastes Voliotis is therefore not only getting to know a brand, but at the same time another significant Greek olive variety.
Three Voliotis olive oils | Which one fits whom?
The three variants do not only differ based on their polyphenol values.
| Voliotis | Polyphenols | Fruitiness | Bitterness | Pungency |
|---|---|---|---|---|
| Early Harvest | 674 mg per kg | 4.7 | 3.4 | 3.9 |
| Extra | 418 mg per kg | 4.3 | 3.0 | 3.6 |
| Organic | 356 mg per kg | 4.8 | 3.3 | 4.0 |
These numbers already show something important:
The highest total polyphenol value does not automatically mean the highest fruitiness or the strongest pungency.
Voliotis Organic, for example, has fewer total polyphenols than Voliotis Extra, but is described sensorically as having slightly higher fruitiness and pungency.
This is exactly why laboratory values and sensory assessments should be viewed together.
Voliotis Early Harvest | 674 mg polyphenols per kg
The white Voliotis edition is the family's early harvest and currently the Voliotis olive oil with the highest total polyphenol value in the Green Agora range.
- Total polyphenols: 674 mg per kg
- Oleocanthal: 194 mg per kg
- Oleacein: 110 mg per kg
- Free acidity: 0.19 percent
- Fruitiness: 4.7
- Bitterness: 3.4
- Pungency: 3.9
The Amfissis olives are harvested early for this variant.
The sensory profile combines fresh herbs, green almonds, and olive leaf with impressions of freshly cut grass as well as spicy nuances.
Voliotis Early Harvest is particularly interesting for people who are looking for a more characterful Amfissis style and would also like to deliberately taste olive oil on its own.
Why the early harvest is not automatically the best Voliotis
674 mg total polyphenols per kg is the highest current value within the Voliotis family.
This makes the early harvest analytically particularly interesting.
However, it does not mean:
Voliotis Early Harvest is automatically better for everyone than Voliotis Extra or Voliotis Organic.
For example, those looking for a somewhat more accessible olive oil for many different dishes may be happier with the black edition.
Those specifically wanting organic, on the other hand, have a different priority with the beige edition.
Early harvest olive oil | Understanding "early harvest" correctly
Voliotis Extra | The black edition with 418 mg
Voliotis Extra is the classic black edition.
- Total polyphenols: 418 mg per kg
- Oleocanthal: 135 mg per kg
- Oleacein: 96 mg per kg
- Free acidity: 0.30 percent
- Fruitiness: 4.3
- Bitterness: 3.0
- Pungency: 3.6
The profile is balanced and versatile.
Descriptions include nutty notes, herbs, almonds, olive leaf, as well as green apple and banana aromas.
Voliotis Extra is therefore particularly suitable as a versatile extra virgin olive oil for:
- Salads
- Vegetables
- Bread
- Pasta
- Legumes
- Fish
- Warm dishes
- Mediterranean everyday cuisine
Voliotis Organic | The beige edition with 356 mg
Voliotis Organic complements the family with the certified organic variant.
- Total polyphenols: 356 mg per kg
- Oleocanthal: 148 mg per kg
- Oleacein: 93 mg per kg
- Free acidity: 0.30 percent
- Fruitiness: 4.8
- Bitterness: 3.3
- Pungency: 4.0
- Organic: certified
Sensorically, fresh herbs, nuts, almonds, green apple, and spicy impressions are described.
Voliotis Organic is particularly interesting for customers who are explicitly looking for a certified organic Amfissis olive oil.
The distinction is important:
Only Voliotis Organic is certified organic among these three variants.
Voliotis Early Harvest and Voliotis Extra are also extra virgin olive oils and kosher certified, but not automatically organic.
What does kosher certification mean for Voliotis?
A special feature of the Voliotis olive oils offered by Green Agora is their kosher certification.
Kosher describes adherence to Jewish dietary laws.
A kosher certification does not simply check the ingredients of a product.
Depending on the product and certification procedure, production processes, facilities, and other conditions can also be included in the inspection.
The certification held for the Voliotis products comes from the environment of the Jewish community of Athens and its local kosher certification.
For consumers, gastronomy, trade, and gift recipients who require kosher certification, this information is therefore particularly relevant.
However, kosher does not automatically mean higher chemical or sensory olive oil quality.
The certification answers a different question than polyphenol content, acidity, or professional sensory assessment.
What does kosher mean | The certification of the Voliotis olive oils
Kosher is not a general quality ranking
In the old understanding, a kosher certification is sometimes equated with special purity or automatically higher food quality.
That would be too sweeping.
Kosher certification confirms compliance with the relevant religious requirements.
The extra virgin olive oil quality grade, by contrast, is judged based on other legal, chemical, and sensory criteria.
With Voliotis, these properties come together, but should be communicated separately.
Polyphenols | Comparing 674, 418, and 356 mg correctly
All three Voliotis variants possess current total polyphenol values.
- Early Harvest: 674 mg per kg
- Extra: 418 mg per kg
- Organic: 356 mg per kg
The values differ significantly.
Nevertheless, one should not conclude from this that the products should be evaluated exclusively based on this order.
The total polyphenol value is only one part of the phenolic profile.
For instance, Voliotis Organic has 148 mg oleocanthal per kg, even though its total polyphenol value is lower than that of Voliotis Extra.
Voliotis Extra has 135 mg oleocanthal per kg.
This example also shows:
Total polyphenols and individual phenols do not necessarily develop proportionally.
Polyphenols in olive oil | Taste, analysis values, and EU Health Claim
Oleocanthal and Oleacein | Comparing the three variants
| Voliotis | Oleocanthal | Oleacein |
|---|---|---|
| Early Harvest | 194 mg per kg | 110 mg per kg |
| Extra | 135 mg per kg | 96 mg per kg |
| Organic | 148 mg per kg | 93 mg per kg |
Oleocanthal is known, among other things, for its characteristic peppery perception in the throat.
Oleacein is also one of the significant phenolic compounds in extra virgin olive oils.
These individual values are analytically interesting, but they do not represent a medical assessment or a complete quality ranking.
Acidity | Categorizing 0.19 and 0.30 percent correctly
Free acidity also differs within the Voliotis family.
- Voliotis Early Harvest: 0.19 percent
- Voliotis Extra: 0.30 percent
- Voliotis Organic: 0.30 percent
For extra virgin olive oil, the European maximum value is 0.80 percent.
The three stated values are therefore significantly below the general upper limit for this parameter.
However, the low acidity of the early harvest does not automatically mean that it must be sensorially better based on this single number.
Free acidity is one of several laboratory values.
EU Health Claim | The three values must be properly verified
For suitable olive oils, the following authorized health claim exists in the European Union:
Olive oil polyphenols contribute to the protection of blood lipids from oxidative stress.
This claim may only be used for olive oil that contains at least 5 mg of hydroxytyrosol and its derivatives per 20 g of olive oil.
In addition, consumers must be informed that the beneficial effect is obtained with a daily intake of 20 g of olive oil.
In older or existing Voliotis information, the following amounts per 20 g are stated:
- Early Harvest: 13.49 mg
- Extra: 8.35 mg
- Organic: 7.13 mg
However, these figures are very close to the mathematical conversion of the respective total polyphenol values per 20 g.
Therefore, Green Agora should only explicitly refer to them as claim-relevant hydroxytyrosol and derivative amounts if the respective current laboratory report confirms exactly this allocation.
A total polyphenol value alone is not sufficient for the EU Health Claim.
20 g is not a general dietary recommendation
The 20 g mentioned for the EU Health Claim are part of the legal conditions for this specific health claim.
They are not a general medical dosage for everyone.
Also, olive oil does not have to be consumed straight to be part of one's diet.
The Voliotis olive oils can be enjoyed straight as well as used in the kitchen.
Enjoying Voliotis Early Harvest straight
Among the three varieties, the Early Harvest is particularly interesting for people looking for a more pronounced character.
The combination of fruitiness 4.7, bitterness 3.4, and pungency 3.9 makes it interesting for a conscious tasting.
Many customers also enjoy high-character premium olive oils straight.
Especially then, the differences between Amfissis and olive varieties like Koroneiki, Tsounati, or Kalamon can become particularly clear.
Voliotis Extra for versatile cooking
The black edition has the most balanced profile of the three varieties.
With a fruitiness of 4.3, bitterness of 3.0, and pungency of 3.6, it can be used in many different ways.
For example, it goes well with:
- Salads
- Bread
- Tomatoes
- Vegetables
- Fish
- Pasta
- Legumes
- Soups
- Warm Mediterranean dishes
Extra virgin olive oil is not limited to cold dishes.
Voliotis Organic | When organic and kosher are required together
The beige edition plays a special role among the three products.
It combines:
- Amfissis from Pelion
- Extra virgin olive oil
- Organic certification
- Kosher certification
- 356 mg total polyphenols per kg
- 148 mg oleocanthal per kg
Especially when a purchasing decision is to explicitly take both organic and kosher into account, this variant is particularly interesting.
However, organic and kosher are two independent certification or production features.
Which Voliotis variety suits me?
Choose Voliotis Early Harvest if you:
- Are looking for the highest current polyphenol value of the three varieties
- Prefer early harvest
- Like a style with more character
- Enjoy tasting olive oil straight
Choose Voliotis Extra if you:
- Are looking for a versatile Amfissis olive oil
- Cook with olive oil regularly
- Prefer a balanced profile
- Do not require organic certification
Choose Voliotis Organic if you:
- Explicitly want organic
- Simultaneously require kosher certification
- Like fruitiness and a clear but balanced pungency
Therefore, there is not one single Voliotis variety that is automatically the best for everyone.
Voliotis Selection | Comparing all three olive oils directly
Those who want to not only read about the differences but taste them for themselves can compare all three varieties together.
The Voliotis Selection from Green Agora contains:
- Voliotis Early Harvest 500 ml
- Voliotis Organic 500 ml
- Voliotis Extra 500 ml
This is a great way to experience how different three olive oils from the same family and the same olive variety can be.
For olive oil beginners, this comparison is just as interesting as it is for experienced connoisseurs.
Voliotis as a gift | Kosher certification as a special factor
The three Voliotis varieties are also interesting for the gift segment.
Especially for business partners, families, or recipients for whom kosher certification is relevant, the certification can make product selection easier.
However, the certification should not just be mentioned decoratively on a gift page.
Anyone who requires kosher should be able to understand which specific olive oil is certified and on what basis.
This is precisely why transparency is more important at Voliotis than a general advertising slogan.
Internationally awarded | Voliotis Green
Voliotis is also represented at international olive oil competitions.
For example, Voliotis Green received a gold award in the quality category at the London Olive Oil Awards 2025.
This is an interesting additional signal for the corresponding submitted sample.
However, a competition award does not replace current laboratory values or your own tasting and does not guarantee that every future harvest will turn out identically.
Ayhan's perspective | Why I find the three together exciting
At Voliotis, I don't just find a single olive oil interesting.
For me, the real strength lies in the direct comparison of the three varieties.
All three come from the same family, the same region, and the same olive variety.
Nevertheless, they do not taste identical and have different analytical values.
The Early Harvest currently has 674 mg of total polyphenols per kg, Extra has 418 mg, and Organic has 356 mg.
If a customer asks me which one is the best, I would therefore first ask back:
Would you like the Early Harvest and more intensity, a versatile all-rounder, or is organic particularly important to you?
It is precisely these differences that make olive oil exciting for me.

These include, for example:
- Koroneiki

This turns a table of laboratory values into an actual sensory comparison.
