There is no simple, universally applicable answer to this question.
The degree of ripeness of the olive at the time of harvest can influence, among other things:

- oil yield
But:
Early harvest does not automatically mean better quality.
And:
A later harvest does not automatically mean poor olive oil.
Olive variety, location, climate, water supply, the health of the fruit, processing, and the harvest year also change the result.
Therefore, for me, the most interesting question is not:
early or late?
But rather:
Which degree of ripeness was appropriate for this variety, this location, this vintage, and the desired olive oil?

This table describes typical tendencies and not universal laws of nature.
The olive variety in particular can significantly alter the ripening process.
Early harvest is not a fixed date
One of the most important corrections is:
Early harvest does not automatically mean October.
A calendar date describes the actual degree of ripeness only incompletely.
An olive in a warm region may be significantly more developed, while fruits of another variety or from a higher-altitude growing area may still be at a much earlier ripening stage at the same time.
The timing of the harvest is influenced by, among other things:
- olive variety
- growing region
- altitude
- temperature patterns
- precipitation
- irrigation
- fruit load
- health condition of the olives
- desired flavor profile
- production goal
A harvest in September can be very early for one producer.
For another, October or November may still fall within the desired early ripening stage.
The degree of ripeness of the olive is therefore more meaningful than the month name.

What changes during olive ripening?
During ripening, the olive changes continuously.
Changes include, among others:
- color
- firmness
- water content
- oil content and extractability
- phenolic composition

- volatile flavor compounds
The visible color change from green to increasingly violet or darker stages of ripeness is often referred to as veraison.
A producer therefore does not decide based solely on the calendar.
They must consider the condition of the fruit and their desired product profile.
What is the maturity index for olives?
In science and production, a so-called "maturity index" is frequently used.
Olives are assigned to different stages of ripeness based on their external and internal coloration.
This allows for a more systematic comparison than statements such as:
October is early.
Or:
December is late.
However, the maturity index is not a perfectly universal instrument either.
Depending on the olive variety, fruit firmness, water content, or other ripening characteristics may also be of interest.
Early harvest and polyphenols | What can really be said?
The timing of the harvest is one of the factors that can influence the phenolic profile of extra virgin olive oil.
For many olive varieties, studies show higher concentrations of certain phenolic compounds at earlier stages of ripeness than in more mature fruit of the same variety.
These include various secoiridoids and their derivatives.
These compounds can also contribute to the characteristic bitterness and pungency.
Therefore, there is an understandable connection between:

But:
This connection must not be turned into a universal numerical rule.
Do polyphenols drop by 40 or 50 percent every month?
No.
There is no universally valid monthly depletion rate.
The trend depends on, among other things:
- olive variety
- ripening stage
- climate
- water supply
- harvest year
- processing
In some varieties, the total phenol content decreases significantly during ripening.
In others, the change is less pronounced.
And for some varieties studied, the content may initially rise until a certain stage of ripeness and subsequently fall again.
Therefore, the claim:
Every month later automatically means 40 or 50 percent fewer polyphenols
is not supported by evidence.
The olive variety can completely change the comparison
This is one of the most important points in this entire article.
Olive varieties possess different genetic and chemical properties.
Koroneiki.
Tsounati.
Kalamon.
Amfissis.
Hondroelia.
And many others.
They do not develop identically during ripening.
Therefore, an olive oil from one variety at a certain degree of ripeness can possess a completely different phenol profile than an olive oil from another variety at the supposedly same harvest time.
Two October oils do not have to be chemically or sensorially comparable.
Why two polyphenol values do not prove the harvest time
Suppose:
Olive oil A has 1,000 mg/kg of total polyphenols.
Olive oil B has 400 mg/kg.
It does not follow from this that:
Olive oil A was simply harvested much earlier.
The products can simultaneously differ in:
- olive variety
- location
- climate
- irrigation
- health condition of the fruits
- extraction
- malaxation time
- filtration
- storage
- analytical method
- time of analysis
If one wants to scientifically study the influence of harvest time, another comparison is much more meaningful:
same variety | same location | same harvest year | different stages of ripeness | processing as comparable as possible.
Only then can the factor of degree of ripeness be significantly better isolated.
Early harvest often means less oil yield
Why, then, isn't every olive oil harvested as early as possible?
An important reason is the yield.
During ripening, the oil content and extractability of the fruit change.
At earlier stages of ripeness, less finished olive oil can therefore be obtained from the same amount of olives.
For the producer, this can mean:
- more olives per liter
- higher harvest costs per liter
- higher processing costs per liter
- lower overall yield
However, how large this difference is cannot be generalized with a fixed percentage.
Here, too, variety, water content, degree of ripeness, and processing play a role.
The harvest time is a conflict of objectives
For a quality-oriented producer, it is therefore not just about:
as early as possible.
And it is also not just about:
as much oil as possible.
They are looking for a sensible point between:
- desired sensory characteristics
- phenol profile
- flavor profile
- oxidative stability
- oil yield
- production costs
This is precisely why I find the term:
optimal harvest time
often more interesting than the simple question:
early or late?
Is earlier always better?
No.
Even an extremely early harvest can have disadvantages.
Depending on the variety, olives can:
- still yield very little oil
- be more difficult to process
- taste extremely bitter
- develop very intense pungency
- not yet have fully reached their desired flavor profile
The goal of a good producer is therefore not:
as early as somehow possible.
But rather:
harvest as early or as ripe as makes sense for the variety, vintage, and desired olive oil.
How does an early harvest olive oil taste?
Olive oils from less ripe fruit can often have a particularly green sensory profile.
Possible impressions include:
- freshly cut grass
- olive leaf
- artichoke
- green almond
- green tomato
- herbs
- arugula
Bitterness and pungency can also be more pronounced.
In a sensorially flawless extra virgin olive oil, bitterness and pungency are not defects.
But:
more bitterness does not automatically mean higher overall quality.
What changes in terms of taste as ripening progresses?
As ripening progresses, the flavor profile can change.
In many varieties:
- green notes can diminish
- riper fruit aromas can emerge
- bitterness can decrease
- pungency can decrease
Here, too, one should not draw reverse conclusions.
A mild olive oil does not prove a late harvest.
A specific olive variety may appear more harmonious by nature.
Sensory analysis provides clues.
It does not replace documented harvest information.
Is a scratching sensation in the throat proof of an early harvest?
No.
The characteristic throat perception can be related to phenolic compounds like oleocanthal.
It can be very pronounced in certain early harvest olive oils.
However, the human throat can neither:
- determine the time of harvest
- measure the total polyphenol content
- determine an oleocanthal concentration in mg/kg
Sensory pungency is perception. A quantitative concentration is analytical data.

A green color is also not proof of an early harvest
Early harvested olives can result in intensely green olive oils due to their pigments.
But color also depends on:
- olive variety
- ripeness condition
- pigment composition
- processing
- filtration
from.
A high-quality extra virgin olive oil can be green, greenish-yellow, or gold-colored.
Color is not a reliable indicator of quality or harvest timing.
Early harvest and oxidative stability
Phenolic compounds can contribute to the oxidative stability of olive oil.
Therefore, phenol-rich early harvest olive oils can have high stability under comparable conditions.
But stability does not depend on polyphenols alone.
The fatty acid composition and other product characteristics also play a role.
And even an analytically very stable olive oil can lose quality through unfavorable storage.
Particularly relevant are:
- light
- heat
- oxygen
- time

Is early harvest a requirement for extra virgin olive oil?
No.
Extra virgin olive oil is a legally defined quality grade.
The time of harvest is not a fixed date within this definition.

- Median of defects 0
- Median of fruitiness greater than 0
- Further chemical quality and purity parameters
An olive oil from riper, healthy fruits can also meet these requirements.
Early harvest is a product characteristic.
Extra virgin olive oil is a quality grade.
These terms should not be equated.
Is early harvest olive oil automatically healthier?
That statement would be too generalized.
For many varieties, earlier ripening stages can favor higher concentrations of certain phenolic compounds.
However, this does not result in a general medical superiority of an early harvest olive oil.
Even a high total polyphenol value is not a general statement regarding a medical effect.
Specific legal requirements apply to health claims on food within the European Union.

For olive oil polyphenols, the following authorized health claim exists under defined conditions:
Olive oil polyphenols contribute to the protection of blood lipids from oxidative stress.
This claim may only be used if the specific olive oil meets the legal requirements.
This includes, in particular, a sufficient amount of hydroxytyrosol and its derivatives per 20 g of olive oil.
An early harvest can favor a favorable phenol profile in certain varieties.
But:

I am much more interested in:
What did the producer want to achieve with this variety?

How was it processed?
