What is oleocanthal?
Oleocanthal is a naturally occurring phenolic compound that can be present in extra virgin olive oil.
Chemically, it belongs to the:
Secoiridoid derivatives.
Oleocanthal is part of a much larger phenolic profile.
This includes, among others:
- Oleacein
- Hydroxytyrosol and its derivatives
- Tyrosol and its derivatives
- Oleuropein-related compounds
- Ligstroside-related compounds
- other phenolic substances
Oleocanthal is therefore not another term for polyphenols as a whole.
It is a single compound within a complex analytical profile.

Why is oleocanthal felt particularly in the throat?
The sensory effect of oleocanthal is unusual.
Many pungent foods irritate large areas of the mouth.
With oleocanthal, however, the perception can occur noticeably strong in the:

A well-known scientific study showed that oleocanthal can activate the sensory ion channel:
TRPA1
The anatomical distribution and sensitivity of this receptor help explain the typical throat perception.
This is why an olive oil can initially seem fruity and develop a clear peppery aftertaste in the throat a few seconds later.
This perception is real and well-researched scientifically.
Pungency is part of professional olive oil sensory analysis
According to the International Olive Council, three characteristics are among the central positive sensory attributes of extra virgin olive oils:
- Fruitiness
- Bitterness
- Pungency
Pungency is described as a biting tactile sensation.
It occurs particularly frequently in olive oils produced at the beginning of the harvest season from olives that are still unripe.
It can be perceived in the entire oral cavity, but especially:
in the throat.
A peppery olive oil is therefore not defective just because it is clearly perceptible in the throat.
Especially with characterful early harvests, this pungency can be part of the desired sensory profile.
Pungency is positive | But not a quality ranking
An intensely pungent olive oil can be excellent.
A less pungent olive oil can also be excellent.
For the legal category:
Extra virgin olive oil
relevant factors include, among others, the absence of sensory defects, the presence of fruitiness, and the prescribed chemical parameters.
Pungency is a positive attribute.
However, it is:
not an independent seal of quality.
Therefore, the statement:
The stronger the scratch in the throat, the higher the overall quality automatically
is too simple.
The more precise statement is:
A peppery pungency can be a characteristic positive feature of an extra virgin olive oil. Oleocanthal can contribute significantly to this special throat perception.
Why we do not speak of "healthy pungency"
Oleocanthal is scientifically very interesting.
However, on a commercial food website, this should not automatically become the advertising slogan:

General statements about the health benefits of a food are subject to the rules for health claims in the European Union.
There is no separate approved health claim for oleocanthal alone.
This is why we at Green Agora position oleocanthal primarily through sensory analysis and transparent analytics.
Where an approved EU Health Claim is used for a specific olive oil, its legal requirements must be met separately.
Oleocanthal and total polyphenols | Not the same number
One of the most important distinctions in this guide is:
Total polyphenols are not equal to oleocanthal.
A total polyphenol value describes different phenolic compounds or an analytically defined total quantity, depending on the analysis method.
Oleocanthal, by contrast, is:

Analysis values are properties of a specific sample and harvest, not permanent attributes of a brand name.
Kouros of Zeus Red | 649 mg Oleocanthal from Kalamon
Kouros of Zeus Red is produced from:
Kalamon
olives from Krokes in the Peloponnese.
Currently, the following are listed:

- 69 mg oleacein per kg
It is precisely the Kalamon variety that makes this product particularly interesting.
Many people know the variety mainly as a table olive.
As an extra virgin olive oil, however, Kalamon can develop a distinctive and characterful style.
649 mg of oleocanthal per kg is a very high current analysis value.
The value should still be considered as part of the overall product profile.
Voliotis Early Harvest | 194 mg Oleocanthal from Amfissis
Voliotis Early Harvest adds the following olive variety to the comparison:
Amfissis.

It is precisely this detailed breakdown that makes this analysis particularly interesting.
It shows that the informative value of a laboratory report can extend significantly beyond a general total polyphenol value.
Creta Eleon Organic | 165 mg Oleocanthal in large kitchen container
Creta Eleon Organic is produced from:
Koroneiki from Chania on Crete.

Can you measure oleocanthal by taste?
No.
A distinct peppery sensation in the throat can pair well with an oleocanthal-rich olive oil.
However, it does not allow for a quantitative statement such as:
This olive oil tastes twice as pungent and therefore contains twice as much oleocanthal.
The perception depends on several factors.
These include:
- concentration of oleocanthal
- other phenolic compounds
- overall aroma profile
- olive variety
- temperature of the sample
- individual sensory sensitivity
The palate can experience character.
The laboratory provides the exact number.
More oleocanthal does not automatically mean more total polyphenols
This equation does not work reliably either.
The current values show this very clearly.
Kouros Red has:

Kouros Limited Edition has:
- 691 mg total polyphenols
- 171 mg oleocanthal

The composition of the phenol profile is therefore at least as interesting as the large aggregate number on a table.
Early harvest and oleocanthal | A connection, but no guarantee
Harvest time and maturity level can significantly influence the phenol profile of an olive oil.
Olives harvested earlier and while still unripe can, depending on the:
- olive variety
- location
- harvest year
- processing
produce higher concentrations of certain phenolic compounds.
A study of 175 monovarietal olive oils also showed large differences in oleocanthal and oleacein, as well as a positive association between high values and an earlier harvest time.
At the same time, the study showed clear varietal effects.
Early harvest can promote oleocanthal.
But it does not guarantee a specific value.
Early Harvest Olive Oil | Understanding Early Harvest correctly
What does research say about oleocanthal?
Oleocanthal has been intensively researched scientifically for many years.
Two areas of research are particularly well known.
Sensory research
Research on throat perception shows that oleocanthal:
can activate TRPA1.
Thus, the typical peppery perception has a concrete molecular and sensory basis.
Mechanistic research
A widely cited paper from 2005 examined oleocanthal in the laboratory and observed an inhibition of the enzymes:
- COX 1
- COX 2
These enzymes also play a role in the mechanism of action of certain drugs.
This was a scientifically noteworthy mechanistic finding.
It made oleocanthal an important subject of research.
However, it does not mean:
Olive oil is a medicine.
And it also does not mean:
A Green Agora olive oil can replace an anti-inflammatory drug due to its oleocanthal value.
Are there human studies now?
Yes.
Research into polyphenol-rich olive oils is no longer limited exclusively to cell culture and animal models.
There are smaller randomized human studies in which olive oils with higher concentrations of oleocanthal and oleacein or special polyphenol-rich olive oil extracts were examined.
These include, for example:
- the APRIL study from 2023 with an oleocanthal-rich and oleacein-rich olive oil
- the OleoMetS study with 102 randomized participants and a special polyphenol-rich olive oil extract
This is scientifically interesting because it means human research is also available.
But:
The studies differ significantly in terms of:
- product
- extract or olive oil
- dosage
- participant group
- duration
- investigated target parameters
Such results should therefore not simply be transferred to Pamako, Kouros, Di Morea, or other Green Agora products.
And they do not create a new approved health claim for oleocanthal.
Is oleocanthal natural ibuprofen?
This formulation is frequently encountered on the internet.
It stems from the well-known mechanistic research from 2005.
As a product message, however, it is too simplistic.
Oleocanthal and ibuprofen are different molecules.
Certain similarities in investigated biochemical mechanisms do not mean:
- identical effect in the human body
- identical dosage
- identical bioavailability
- identical medical application
- identical safety
The statement would be particularly problematic if one said:
Oleocanthal acts like ibuprofen, only natural and without side effects.
There is no basis for this statement.
Oleocanthal is an interesting component of a food. It is not an approved painkiller.
Oleocanthal and the EU Health Claim | The exact distinction
There is an approved European health claim for certain olive oils.
The wording is:
"Olive oil polyphenols contribute to the protection of blood lipids from oxidative stress."
The claim may only be used for an olive oil that contains at least:
5 mg of hydroxytyrosol and its derivatives, for example, oleuropein complex and tyrosol, per 20 g of olive oil.
In addition, consumers must be informed that the beneficial effect is obtained with a daily intake of:
20 g of olive oil.
The regulation does not define a separate oleocanthal threshold for this claim.
Therefore, one should not conclude solely from a number like:
649 mg of oleocanthal per kg
that all claim requirements are automatically documented.
For product-specific use, it is crucial what the concrete laboratory report indicates regarding the claim-relevant compounds.
Pamako and Di Morea | Examples with detailed claim analysis
In some current Green Agora analyses, the documentation goes beyond total polyphenols and oleocanthal.
Pamako Gold 2025/26
The current certificate indicates for 20 g of the analyzed sample:
41.62 mg of hydroxytyrosol, tyrosol, or corresponding derivatives.
Pamako Silver 2025/26
For 20 g of the analyzed sample, the following are listed:
29.33 mg of hydroxytyrosol, tyrosol, or corresponding derivatives.
Di Morea 2025/26
The current analysis indicates:
13.28 mg of tyrosol and hydroxytyrosol derivatives per 20 g.
Such product-specific details are far more meaningful for claim assessment than a simple conversion of total polyphenols.
Here, too, the values always apply to the specific sample or harvest analyzed.
20 g is not a general oleocanthal dosage
The frequently mentioned:
20 g of olive oil
is not a general medical oleocanthal dosage.
This amount belongs to the conditions of the approved EU Health Claim for olive oil polyphenols.
It does not follow that:
Everyone should drink 20 g of an olive oil as rich in oleocanthal as possible every day.
Olive oil is a foodstuff.
It can be used, for example:
- in salads
- over vegetables
- with legumes
- over prepared dishes
- with bread
- or consciously tasted neat
A personal indulgence routine is not a medical dosage.
What does HOCO mean at Green Agora?
At Green Agora, the abbreviation:
HOCO
is used for:
High Oleocanthal Content.
This highlights the special focus of a product or a product selection on oleocanthal.
It is important to note:
HOCO is not a legal olive oil quality grade.
There is also no generally established EU limit above which every olive oil would legally have to be labeled as High Oleocanthal Content.
That is why, for Green Agora, the concrete number is more decisive than the abbreviation alone.
1318 mg, 758 mg, or 649 mg of oleocanthal per kg are verifiable analysis data.
The designation HOCO should explain this analysis and not replace it.
Oleocanthal values change between harvests
The figures mentioned in this guide are not immutable properties of a brand.
Olive oil is a natural product.
The oleocanthal content can be influenced by:
- Olive variety
- Degree of ripeness
- Time of harvest
- Weather
- Harvest year
- Location
- Time between harvest and processing
- Extraction conditions
- Storage
- Time of analysis
- Analytical method
The current Pamako data, in particular, show how large these differences can be.
Therefore, analysis values should be updated with a new harvest and not carried over for years as unchangeable product properties.
Oleocanthal and storage | A high starting value does not automatically remain unchanged
After production, even a high-quality olive oil continues to change slowly.

Phenolic compounds can also decrease or change during storage.

Can I tell from the taste how much oleocanthal is contained?

Green Agora uses HOCO as an abbreviation for High Oleocanthal Content. It is not a legally defined quality grade.
