At first, not much seems to happen.
Then the fruitiness arrives.

It burns in the throat.
Sometimes only slightly.
Sometimes noticeably.
And sometimes someone even has to cough briefly.
Then people often look at me in surprise and ask:

This exact question is fascinating.
Because the burning sensation does not have to mean that something is wrong with the olive oil.
In high-quality extra virgin olive oils, this pungency can be a completely natural and explicitly positive component of the sensory profile.
And one phenolic compound is particularly interesting in this regard:
Oleocanthal.
Oleocanthal can produce a characteristic irritation in the throat that differs significantly from many other spicy foods.
Scientific studies even show that this irritation is perceived primarily in the throat and can vary in intensity from person to person.
This is precisely why, for me, the burning sensation in the throat is not a cause for concern, but rather, first and foremost, sensory information.
But the limit is equally important:
More burning does not automatically mean higher quality.
More burning does not automatically mean a specific oleocanthal value.
And more burning does not automatically prove that an EU health claim is met.

The characteristic pungency of certain extra virgin olive oils is related, among other things, to natural phenolic compounds.
Particularly important is:
Oleocanthal.
Oleocanthal can induce a pronounced peppery irritation in the throat.
The special thing about it is:
The pungency often does not arise on the tongue first.
An olive oil can initially seem:
- fruity
- green
- herbal
- or even surprisingly soft
Only a few seconds later, the typical pungency develops at the back of the throat.
Exactly this delayed throat irritation is one of the most characteristic sensory experiences of intense extra virgin olive oils.
Oleocanthal | The substance behind the characteristic throat irritation
Oleocanthal is a natural phenolic compound that can be found in extra virgin olive oil.
The concentration can vary considerably between different olive oils.
Influencing factors include, among others:
- Olive variety
- Degree of ripeness
- Time of harvest
- Harvest year
- Processing
- Storage
In sensory terms, oleocanthal is particularly interesting because it is associated with a characteristic pungency in the throat.
This perception differs from many other spicy foods.
With chili, pungency is typically experienced clearly in the mouth and on the tongue.
With oleocanthal, on the other hand, the irritation can occur particularly strongly:
at the back of the throat.
That is why people sometimes experience this exact moment during a tasting:
"That's not actually that spicy."
And a few seconds later:
"Here it comes."
This time-delayed and spatially concentrated irritation is well described scientifically.

What human studies show about throat irritation
The specific perception of oleocanthal has not only been described theoretically.
It has also been investigated in human studies.
A sensory study showed:
The irritation was concentrated primarily in the oropharyngeal area.
In the front of the mouth, on the other hand, significantly less irritation was perceived.
Also interesting was the temporal course.
On average, the perceived irritation reached its peak approximately:
15 seconds after exposure.
Furthermore, the sensation could remain detectable:
longer than 180 seconds.
This explains very well why an olive oil can initially seem pleasantly fruity and the pungency only appears noticeably in the throat later on.
Why do you feel oleocanthal specifically in the throat?
Scientific studies have shown that oleocanthal can activate the sensory receptor:
TRPA1.
Crucial here is not just the receptor itself.
Its anatomical distribution in the mouth and throat area also plays a role.
Human experiments and tissue studies showed a special sensitivity of the throat area to oleocanthal.
Thus, there is a molecular and anatomical explanation for this unusually localized pungency.
This means:
The typical irritation is not simply an unspecific perception of:
"somehow spicy".
It has a very characteristic sensory basis.
Why do you sometimes have to cough?
With certain intense olive oils, the throat irritation can become so distinct that a brief:
cough reflex
occurs.
This is also sensorially plausible.
The throat is part of a very sensitive area that can react to chemical stimuli.
If oleocanthal creates a clear irritation there, a brief cough reflex can occur in some people.
A short cough during a tasting does not therefore automatically mean that the olive oil is spoiled or flawed.
But:
Coughing is also not a quality measuring device.
An olive oil does not have to make anyone cough to be excellent.
People react with varying intensity to oleocanthal
During tastings, I notice again and again:
Two people try exactly the same olive oil.
One says:
"Very pleasant."
The other says:
"That is incredibly spicy."
Both can be right in their perception.
Human studies show that the perceived oleocanthal irritation can vary significantly between individuals.
People have different:
- sensory sensitivities
- experiences
- familiarity with intense olive oils
- individual perception patterns
This is why the same analyzed bottle can be described in completely different ways sensorially.
The product has a character.
But the person also has their own perception.
Pungency and bitterness | Two different perceptions
Bitterness and pungency are often confused with each other.
In sensory terms, however, they are not the same.
Bitterness
Bitterness is a:
taste perception.
In olive oil, it is associated in particular with green or turning olives and phenolic compounds.
Pungency
Pungency, on the other hand, is a:
tactile sensation.
In olive oil, it can be perceived particularly in the:
throat.
Therefore, an olive oil can be:
- clearly bitter and clearly pungent
- a little bitter and yet noticeably pungent
- harmoniously bitter and only slightly pungent
- or appear significantly milder overall
The more precisely one separates these perceptions, the greater the sensory world of olive oil becomes.
Pungency is officially a positive sensory attribute
Internationally standardized terms apply to the professional sensory evaluation of virgin olive oils.
The positive attributes include:
- Fruitiness
- Bitterness
- Pungency
The International Olive Council describes pungency as a biting tactile sensation that can occur particularly in oils at the beginning of the harvest season and from still-unripe olives.
It can be perceived throughout the oral cavity, but especially:
in the throat.
Thus, pungency is explicitly not a sensory defect.
Nevertheless, that does not mean:
The spicier, the higher the quality.
Professional quality assessment considers the entire sensory profile.
Is pungency a quality feature?
Yes, but not as a simple ranking.
Pungency is one of the positive sensory characteristics of virgin olive oils.
A high-quality extra virgin olive oil may therefore be clearly piquant and peppery.
But I would never make this the rule:
The spiciest olive oil is automatically the best.
The overall picture is crucial.
I look for:
- Fruitiness
- Bitterness
- Pungency
- Aromatics
- Balance
- Complexity
- Aftertaste
- Sensory flawlessness
Pungency is part of the character.
It is not the entire quality assessment.
How do you recognize good olive oil? | The most important quality characteristics
A mild olive oil is not automatically worse
Some people try a very intense olive oil and subsequently think:
Then every good olive oil must taste like this.
No.
Olive varieties differ.
Harvests differ.
Regions differ.
Producers differ.
And people differ.
A Koroneiki can have a different effect than a Tsounati.
A Kalamon different than a Hondroelia.
One olive oil can be powerful.
Another elegant.
Another very green and aromatic.
Another more harmonious.
Mild does not automatically mean inferior.
Intense does not automatically mean superior.
Polyphenols | More than just a single number
Oleocanthal belongs to the vast world of phenolic compounds in olive oil.
Therefore, when the topic of pungency comes up, people often also talk about:
total polyphenols.
That is fundamentally understandable.
But these terms must not be equated.
A total polyphenol value initially says something about an analytically summarized group of substances.
It does not automatically say how this group of substances is composed.
Depending on the analysis, the following can also be interesting:
- Oleocanthal
- Oleacein
- Hydroxytyrosol derivatives
- Tyrosol derivatives
- Other secoiridoids
A total number can be impressive.
The detailed phenol profile, however, tells a much more accurate story.

Does strong burning automatically mean many total polyphenols?
No.
It would be tempting to say:
The more it burns in the throat, the higher the total polyphenols automatically are.
But current analysis does not show exactly that reliably.
Sensory perception and laboratory analysis are two different levels.
Distinct pungency can fit well with certain phenolic compounds.
But my throat cannot determine a concentration in:
milligrams per kilogram.
That is why I like to work with both levels.
I taste the olive oil.
And I look at the analysis.
Only then does a much more complete picture emerge.
Pamako shows particularly clearly | Total phenols are not oleocanthal
The comparison of different Pamako harvests shows this principle exceptionally clearly.
For Pamako Gold, the analyzed total phenols were:
in 2024 at 2000 mg per kg.
For the analyzed 2025 harvest, they were at:
2081 mg per kg.
The total values thus remained in a similar order of magnitude.
Oleocanthal, however, changed from:
372 mg per kg in 2024
to:
1318 mg per kg in the analyzed 2025 harvest.
Pamako Silver shows a similar basic principle.
The analyzed total phenols were:
in 2024 at 1474 mg per kg
and:
in 2025 at 1466 mg per kg.
Oleocanthal, however, changed from:
283 mg per kg
to:
758 mg per kg.
That is, for me, one of the best real-life examples of why total polyphenols and oleocanthal must not be equated.
The total number can remain similar while the concrete phenol profile changes significantly.
What we do not automatically know from this is:
Why exactly this change occurred between the harvests.
For that, additional controlled data on:
- Climate
- Degree of ripeness
- Harvest day
- Processing
- State of the fruit
would be necessary.
Observe correlation. Do not invent cause.

Olive oils with similar total amounts can have very different oleocanthal values.
And that is precisely why a total polyphenol value alone is not enough when the specific question is:
How much oleocanthal was analyzed?
Furthermore, olive oil is a natural product.
Analytical values can change between harvests and batches.
Can I measure oleocanthal by the burning sensation?
No.
When tasting, I can:
- perceive a characteristic throat irritation
- compare different olive oils with each other
- determine that one oil has a significantly more intense effect than another
But I cannot calculate an exact oleocanthal value from this.
If I want to know how much oleocanthal is actually contained or has been analyzed, I need a suitable:
Laboratory analysis.
Sensory evaluation can provide indications.
Analytics provide measured values.
You should not confuse the two.
The throat is not a qNMR device
For particularly detailed phenol analyses, quantitative:
Nuclear magnetic resonance spectroscopy
can be used.
In short:
qNMR.
With such an analytical method, individual phenolic compounds can be specifically quantified.
That is something completely different from a sensory tasting.
My throat can detect:
There is a peppery irritation here.
The laboratory, on the other hand, can determine:
how many milligrams of a specific compound are present in the examined sample.
The throat detects pungency.
The laboratory determines milligrams.
Early Harvest | Why such olive oils often seem more intense
Many premium olive oils with character are created from olives harvested relatively early.
Depending on the variety and conditions, such olive oils can:
- possess more pronounced green aromas
- have a more distinct bitter effect
- develop more intense pungency
- and show high concentrations of certain phenolic compounds
But:
Early harvest alone does not prove outstanding quality.
Also:
- Raw material
- Transport
- Processing
- Hygiene
- Storage
- Sensory profile
must be right.
In addition, not every olive variety reacts the same way during ripening.
Early Harvest is an important product feature, but not a universal quality formula.

Why tasting olive oil pure is particularly interesting here
When olive oil is used over a salad, a lot happens sensorially at the same time.
Tomato.
Vinegar.
Herbs.
Feta.
Spices.
All these aromas change the perception.
When tasting pure, there is no such distraction.
Then you can observe very consciously:
- When does the fruitiness come?
- When does bitterness begin?
- When does pungency emerge?
- Does it emerge at the front of the mouth?
- Or only later in the throat?
- How long does it last?
- What happens afterwards?
This is exactly how you get to know an olive oil much more precisely.

How I consciously taste olive oil
I don't need a large amount for this.
A small sip is enough.
I first pay attention to:
the scent.
Then to the first impression in the mouth.
Then to:
- Fruitiness
- Aromatics
- Bitterness
And then very consciously to the:
throat.
When does the pungency begin?
How strong does it become?
Does it linger?
Does a brief irritation occur?
Or does it develop slowly?
Afterwards, I observe the finish.
This is how a small sip becomes a sensory profile.
What does the term HOCO mean?
For some Green Agora products, the designation:
HOCO
is used.
This draws attention to a particularly high or highlighted oleocanthal content.
It is important to note:
HOCO is not a legally defined European olive oil quality grade.
The legal category remains, for example:
Extra virgin olive oil.
When a specific oleocanthal value is mentioned, this value should be based on a suitable product-specific analysis.
Oleocanthal and research | Why laboratory findings must not become advertising claims
Oleocanthal has been extensively studied scientifically.
Early laboratory work already showed interesting molecular properties.
Among other things, the inhibition of certain cyclooxygenase enzymes was described in experimental systems.
This research is scientifically fascinating.
But:
It does not make olive oil a natural medicine.
And it does not mean:
Oleocanthal in olive oil acts in humans like a specific dose of a medication.
Laboratory results, clinical effects, and approved food advertising are different levels.
There is currently no separate approved EU health claim for oleocanthal itself.
Strong burning | Does that automatically mean an EU Health Claim?
No.
This distinction is particularly important.
A distinct burning in the throat can be sensorially very interesting.
However, it does not automatically prove that an olive oil meets the requirements for a specific health-related claim.
There is an approved health-related claim in the European Union for olive oil polyphenols.
The official wording is:
"Olive oil polyphenols contribute to the protection of blood lipids from oxidative stress."
The claim may only be used for olive oil that contains at least:
5 mg of hydroxytyrosol and its derivatives per 20 g of olive oil.
In addition, consumers must be informed that the positive effect is achieved with a daily intake of:
20 g of olive oil.
Oleocanthal alone is not the legal claim condition.
Throat irritation alone is also not proof of a claim.
Why total polyphenols also do not automatically prove the EU claim
A very high total polyphenol value is also not enough on its own.
The EU claim refers specifically to:
Hydroxytyrosol and its derivatives.
Therefore, for a specific product, it should be checked:
- which compounds were analyzed
- which method was used
- which harvest or sample was examined
- how many relevant compounds per 20 g are present
Total phenols, oleocanthal, and claim-relevant compounds must not be automatically equated.
Why a laboratory analysis is indispensable for me
I can taste a great deal from an olive oil.
Fruitiness.
Bitterness.
Pungency.
Balance.
Finish.
But I cannot taste:
649 mg of oleocanthal per kg.
Such a number comes from an analysis.
And that is precisely why I do not want to play sensory evaluation and the laboratory against each other.
I need both.
Analysis without sensory evaluation remains just a number.
Sensory evaluation without analysis cannot provide exact concentrations.
When both come together, a much deeper understanding of an olive oil begins for me.

I am usually happy about the question.
Because it means:
The person has perceived something.
They are beginning to taste more carefully.
Perhaps they are consciously experiencing the difference between the following for the first time:
- Bitterness
- Pungency
- Aromatics
Perhaps they are beginning to understand what oleocanthal can mean sensorially.
Perhaps they subsequently ask about:
- the olive variety
- the harvest
- total polyphenols
- oleocanthal
- the laboratory analysis
This is exactly how genuine olive oil knowledge often begins.
Therefore, for me, the burning in the throat is not just pungency.
It can be the moment when someone begins to truly perceive a bottle.
But I would never turn this into a simple formula.
More burning does not automatically mean more quality.
More burning does not automatically mean a specific analytical value.
And more burning does not automatically mean that a health claim is met.
It is a part of sensory evaluation.
A fascinating part.
