The Kalamon olive is one of the best-known olives in Greece.
Many people know it as a large, dark table olive in salads, appetizers, and Mediterranean cuisine.
But Kalamon is capable of more.
From this famous table olive variety, it is possible to produce an exceptionally characterful extra virgin olive oil.
This less well-known side of the Kalamon is exactly what Kouros of Zeus Red from Krokes in Laconia on the southern Peloponnese showcases.
The fruits are deliberately harvested earlier than they would be if they were processed later as dark table olives.
This results in a completely different product.
Green Agora currently documents for Kouros of Zeus Red:

But a deeper look into research makes Kalamon even more interesting.
Larger scientific datasets show that this variety can possess extraordinary genetic potential for high oleocanthal levels.

Particularly striking is the ratio between pungency and bitterness.
Pungency is at 4.0, while bitterness is at 3.0.
This fits an olive oil with a distinct oleocanthal profile.
At the same time, however, it shows:
Pungency and bitterness are two different sensory properties.
What is Kalamon?
Kalamon is a traditional Greek olive variety.
The fruits are comparatively large, elongated, and develop their well-known dark color when fully ripe.
It is precisely their size, texture, shape, and taste that make Kalamon a significant table olive variety worldwide.
Scientifically, however, the variety is explicitly described as an olive variety that can be used for both table olives and olive oil production.
The vast majority of the high-quality fruit is traditionally used for table olives.
This explains why Kalamon is much less known as an olive oil variety.
That is exactly where the appeal of Kouros of Zeus Red lies.
A globally known table olive is consciously harvested here at a different stage of maturity and processed into premium olive oil.
Kalamon or Kalamata | An important difference
The terms Kalamon and Kalamata are often used interchangeably in everyday life.
For a technically accurate description, several things should be separated.
Kalamon is the olive variety.
In addition, there are protected geographical designations in the European Union that include "Kalamata" in the name.
One of these refers to the famous table olive:
Elia Kalamatas.
This designation is a protected designation of origin (PDO).
For olives outside the corresponding protected region of origin, Kalamon is therefore the clear varietal name.
Kouros of Zeus comes from Krokes in Laconia.
That is why we at Green Agora consciously refer to it as:
Kalamon.
Kalamon olive oil is not the same as Kalamata PDO olive oil
This is where a particularly interesting risk of confusion arises.
In fact, there is also a European-protected extra virgin olive oil with the designation:
Kalamata PDO.
One might assume that this olive oil is mainly produced from Kalamon.
However, that is not the case.
The official product specification for Kalamata PDO olive oil stipulates:
mainly Koroneiki and at most 5 percent Mastoidis.
Thus, three terms must be separated:
- Kalamon as the olive variety
- Elia Kalamatas as the protected table olive
- Kalamata PDO olive oil as a protected olive oil made mainly from Koroneiki
Kouros of Zeus Red, on the other hand, is a Kalamon olive oil from Krokes in Laconia.
This distinction is not only linguistically interesting; it also prevents the olive variety and protected origin from being confused with one another.
Why Kalamon is predominantly used as a table olive
Kalamon fruits possess characteristics that make them particularly attractive for processing as table olives.
These include:
- large fruits
- elongated shape
- firm texture
- characteristic dark color when fully ripe
- distinctive taste
That is why it is often more economically sensible to market the fruit as high-quality table olives.
For premium olive oil, the producer must make a different decision.
They forgo leaving the olives on the tree until they reach the typical dark table ripeness.
Instead, they are harvested earlier.
This changes the entire economic and sensory logic of the variety.
Early harvest Kalamon | Less yield for more intensity
The earlier an olive is harvested, the lower the olive oil yield often is.
At this point, the fruit has not yet stored its maximum amount of oil.
At the same time, an early harvest can be associated with a more pronounced phenolic profile, depending on the variety and conditions.
This relationship is particularly interesting for Kalamon.
In the European research project ARISTOIL, oleocanthal levels of more than 1000 mg per kg were observed in Kalamon harvested very early in September.
At the same time, total phenol values of more than 1500 mg per kg were able to occur.
The other side of this approach:
The olive oil content of the very early fruits could be under 5 percent.
This illustrates the economic conflict of objectives.
The producer can harvest later and obtain more olive oil.
Or they can harvest very early and aim for different phenolic and sensory properties, depending on the variety and year.
Early harvest therefore often means less quantity per kilogram of olive and a higher effort per liter of finished premium olive oil.

Kalamon and oleocanthal | What large analytical datasets show
The connection between Kalamon and oleocanthal is not only interesting in the case of Kouros of Zeus.
A large-scale scientific evaluation of Greek olive oils examined thousands of samples using quantitative NMR analysis.
For the varietal comparison, 59 Kalamon olive oils and 2649 Koroneiki olive oils, among others, were available.
The average oleocanthal value was:
Kalamon: 482.6 mg per kg.
Koroneiki: 136.8 mg per kg.
Kalamon thus possessed the highest average oleocanthal value among the varieties compared in this dataset.
Kalamon was also at the very top of the analyzed total phenol content, with an average value of around 769.9 mg per kg.
This does not mean that every Kalamon olive oil automatically reaches these values.
However, it shows:
The variety possesses remarkable potential for highly pronounced phenolic profiles.
Individual Kalamon olive oils can be significantly higher
The large dataset did not only show high average values.
Individual Kalamon samples also reached extraordinary concentrations.
In the study, Kalamon olive oils with oleocanthal levels well over 2000 mg per kg were documented.
In the international master database of the study, a Kalamon sample from Cyprus was even described with several thousand milligrams of analyzed phenolic compounds per kg.
Such extreme values are not a normal standard and should not be understood as an expectation for every Kalamon olive oil.
However, they impressively show:
Kalamon is chemically a much more exciting olive oil variety than its reputation as a pure table olive suggests.
A newer study confirms the potential of Kalamon
A study of olive oils from the Greek region of Epirus also showed the same pattern.
The two samples with the highest oleocanthal content there were from Kalamon.
The following were measured:
- 863 mg oleocanthal per kg
- 712 mg oleocanthal per kg
The corresponding analyzed total phenol contents were:
- 1100 mg per kg
- 1039 mg per kg
This study also does not prove that Kalamon is the variety richest in oleocanthal under all circumstances.
But several independent datasets point in the same direction:
Kalamon can develop exceptional oleocanthal potential.
How do we classify the 649 mg of Kouros of Zeus?
Kouros Red currently contains 649 mg oleocanthal per kg.
This value fits fundamentally very well with the scientifically documented potential of the variety.
However, we would not derive a direct ranking from this.
Why?
Analysis values can differ due to:
- analytical procedures
- laboratory
- harvest year
- maturity level
- time of sampling
- storage duration
Therefore, for example, 649 mg from a specific Kouros analysis should not be played off directly against the average value of another scientific database without verifying the methodology.
The correct statement is:
Kouros Red currently possesses a very high documented oleocanthal value, which at the same time fits well with the high potential of the Kalamon variety observed in research.
The variety alone does not create 649 mg of oleocanthal
Research on oleocanthal now shows very clearly:
The later laboratory value is not just created by the genetics of the Kalamon.
The fruit provides important precursor substances.
During olive oil production, cell structures are broken down and natural enzymes become active.
In the case of oleocanthal, the ligstroside metabolism plays an important role, among other things.
During crushing and malaxation, the secoiridoids measured later in the extra virgin olive oil are created from this through several reaction steps.
Therefore, the specific profile is created by:
Kalamon plus maturity level plus harvest plus fruit quality plus mill plus enzymes plus malaxation plus storage.
This is an important reason why two Kalamon olive oils can have completely different oleocanthal values.

Kouros of Zeus | The family behind the Kalamon olive oil
Kouros of Zeus comes from the Christakos family from Krokes in Laconia.
The family has been connecting its history with olive cultivation for several generations.
For the Kalamon edition, a fruit that is traditionally used primarily as a table olive is deliberately harvested earlier.
The producer describes the concept as an innovative Kalamon extraction.
The harvest begins earlier than if the fruits were intended for eating.
Subsequently, the olives should be processed into olive oil as immediately as possible.
The innovation thus does not lie in inventing a new olive variety, but in looking at a world-famous variety differently.
Krokes in Laconia | Not Kalamata
Kouros of Zeus Red comes from Krokes in Laconia.
This is important for classification.
The variety is called Kalamon.
The place of origin of the olive oil is Krokes.
Consumers should therefore not automatically assume that the variety name "Kalamon" implies "Kalamata" as the origin.
Variety and geographical origin are two different pieces of information.
How does Kouros of Zeus Red taste?
The current Green Agora sensory profile describes:
- Fruitiness 4.3
- Bitterness 3.0
- Pungency 4.0
The described aroma impressions include:
- fresh herbs
- tomato leaf
- nuts
- green grass
- olive tree leaf
- green almond
This gives Kouros Red a distinctly green and peppery profile.
It is particularly interesting that the pungency is perceived more strongly than the bitterness.
This distinguishes Kouros Red, for example, from very bitter and simultaneously very pungent olive oils such as Pamako Gold.
Why 649 mg of oleocanthal and a pungency of 4.0 are not a contradiction
At first glance, one might expect:
An olive oil with 649 mg of oleocanthal should automatically taste significantly more pungent than any olive oil with a lower value.
Sensory perception does not work that simply.
Perception is influenced by:
- oleocanthal
- other phenolic compounds
- fruitiness
- bitterness
- volatile aromatic compounds
- tasting temperature
- individual sensitivity
Kouros itself provides a particularly good example.
Kouros Red currently has 649 mg of oleocanthal and a pungency of 4.0.
Kouros Black, made from Koroneiki, currently has 107 mg of oleocanthal and also a pungency of 4.0.
Thus, we can see directly: a sensory pungency score cannot be converted into an oleocanthal value.
That is precisely why we need both laboratory analysis and sensory evaluation.

The comparison between Kouros Red and Kouros Black is particularly valuable.

In terms of sensory profile, the two editions are surprisingly close.
Chemically, however, their documented oleocanthal values differ massively.
Exactly these kinds of comparisons make a multi-producer and multi-variety selection particularly valuable.
Kalamon versus Smertolia | Two rarer perspectives from Krokes
The third Kouros edition at Green Agora is produced from Smertolia.
We currently document:
Kouros Kalamon Red:
- 835 mg total polyphenols per kg
- 649 mg oleocanthal per kg
Kouros Smertolia Limited Edition:
- 691 mg total polyphenols per kg
- 171 mg oleocanthal per kg
Thus, a single producer already shows three completely different olive variety worlds:
Kalamon, Koroneiki, and Smertolia.

0.14 percent acidity | What does the value mean?
Kouros Red currently has a documented free acidity of 0.14 percent.
This is significantly below the legal limit for extra virgin olive oil.
Low acidity can be consistent with healthy fruit and careful processing.
Nevertheless, it should not be used as the sole quality ranking criterion.
0.14 percent does not mean:
twice as good an olive oil as 0.28 percent.

What does HOCO mean for Kouros Red?
Kouros Red is also listed at Green Agora with the designation HOCO.
This describes the special focus on a high oleocanthal content.
It is important to note:
HOCO is not a legal European quality grade.
There is no uniform EU threshold above which an olive oil is automatically classified as HOCO.
Therefore, the specific analysis is more informative for us.
For Kouros Red, it currently reads:
649 mg of oleocanthal per kg.
Is Kouros of Zeus Red organic?
No.
Kouros Red is currently not certified organic.
That does not mean that it is of lower quality as a result.
Organic certification and chemical or sensory quality are different levels of assessment.
An organic olive oil can have high or low polyphenol values.
A non-organic certified olive oil can also exhibit excellent sensory and analytical characteristics.
Kouros Red and the EU Health Claim | What 835 mg does not automatically prove
For suitable olive oils, there is an authorized health claim in the European Union:
Olive oil polyphenols contribute to the protection of blood lipids from oxidative stress.
The claim may only be used if the specific olive oil contains at least:
5 mg of hydroxytyrosol and its derivatives per 20 g of olive oil.
Additionally, it must be stated that the beneficial effect is obtained with a daily intake of 20 g of olive oil.
Neither:
835 mg of total polyphenols per kg
nor:
649 mg of oleocanthal per kg
are by themselves automatic proof of this requirement.
For the specific use of the claim, a suitable product-specific analysis of the relevant compounds is decisive.
Why 835 mg does not simply become a 16.7 mg Health Claim value
Mathematically, 835 mg per kg results in 16.7 mg per 20 g.
This is a correct mathematical conversion.
However, it initially only says:
20 g arithmetically contain 16.7 mg of the scope of analysis indicated as the total value.
It does not prove that this entire amount consists of the hydroxytyrosol and derivative compounds relevant to the EU Health Claim.
Therefore, Green Agora does not use this simple calculation as the sole proof for the claim.
Can you drink Kalamon olive oil pure?
