Many comparisons on the internet treat sunflower oil as a single standardized product.
That is technically too simple.
Classic sunflower oil
Classic sunflower oil typically has a high proportion of:
linoleic acid.
Linoleic acid is a polyunsaturated omega-6 fatty acid.
Polyunsaturated fatty acids possess several double bonds and react more easily with oxygen under comparable conditions than monounsaturated fatty acids.
High-oleic sunflower oil

Anyone who labels every sunflower oil as unstable across the board ignores this essential difference.

When classifying cooking oils from a health perspective, a distinction must be made between scientific discussion and approved commercial claims.
For foods that meet the legal requirements, the following statement is permitted:
"Replacing saturated fats with unsaturated fats in the diet contributes to the maintenance of normal blood cholesterol levels. Oleic acid is an unsaturated fat."
For the claim:
high in unsaturated fats
at least:
70 percent of the fatty acids contained must come from unsaturated fatty acids.
In addition, the unsaturated fatty acids must provide more than:
20 percent of the energy
of the food.
This relationship is not exclusive to olive oil.
The decisive factor is the actual fatty acid profile of the specific food.
For olive oil, however, the high proportion of oleic acid is typically a particularly characteristic feature.
Polyphenols | A difference that sunflower oil does not copy
Extra virgin olive oil can contain a complex olive-specific phenol profile.
These include, for example:
- hydroxytyrosol and its derivatives
- tyrosol and its derivatives
- oleocanthal
- oleacein
- oleuropein-related compounds
- ligstroside-related compounds
These compounds can, among other things, contribute to:

Sunflower oil has no comparable olive-specific phenol profile.
However, this does not mean that sunflower oil does not contain antioxidant minor components.
Sunflower oil is known, for example, for:
tocopherols.
The antioxidant composition is therefore different and should not be confused with the statement that only one of the two oils contains valuable minor components.

Is Omega-6 in sunflower oil automatically bad?
No.
Linoleic acid belongs to the omega-6 fatty acids and is an essential fatty acid.
Nevertheless, it is often claimed on the internet:
Omega-6 automatically causes inflammation.
This generalized statement is not supported by controlled human studies.
A systematic review including randomized controlled trials has already found no convincing evidence that a higher intake of linoleic acid generally increases typical inflammatory markers in healthy adults.
A later meta-analysis of:
30 randomized controlled trials with 1377 participants
also found no significant increase in the examined inflammatory markers due to a higher intake of linoleic acid overall.
Sunflower oil should therefore not be devalued with the buzzword "pro-inflammatory".
The more sensible question is:
What does the total fatty acid profile look like, how is the oil used, and what does the overall diet look like?
Linoleic acid and blood lipids | Here, too, black-and-white thinking is wrong
A meta-analysis of:
40 randomized controlled trials with 2175 participants
examined the influence of a higher intake of linoleic acid on blood lipids.
On average, there was a small decrease in:
- LDL cholesterol
- and HDL cholesterol
while total cholesterol and triglycerides remained overall unchanged significantly.
These data also do not fit the general perception that linoleic acid is fundamentally a problematic nutrient.
However, for the specific selection of a cooking oil, the following remain additionally decisive:
- heat stress
- taste
- processing
- and overall diet
Olive oil or sunflower oil when heating?
When heating, complex chemical changes occur in cooking oils.
These include, among others:
- oxidation
- degradation of natural antioxidants
- formation of secondary oxidation products
- polymerization reactions under prolonged stress
- further changes at very high temperatures
How quickly these processes take place does not depend solely on a temperature figure.
Relevant are:
- fatty acid composition
- natural minor components
- temperature
- duration
- oxygen contact
- number of heating cycles
- water content of the food
- quality of the source oil
Extra virgin olive oil shows good to very good stability under many frying conditions.
The combination of a high proportion of oleic acid and natural minor components is particularly relevant here.
Is extra virgin olive oil really suitable for frying?
Yes.
The claim:
Extra virgin olive oil should generally never be heated
is scientifically untenable.
It can be used for numerous warm kitchen applications.
For example:
- frying
- stewing
- Braising
- Baking
- Oven-roasted vegetables
- Sauces
- Soups
- Fish
- Meat
A scientific review on the use of virgin olive oil for deep-frying concluded that olive oil often performs at least as well as, and in some cases better than, refined vegetable oils when used for frying.
A recent 2024 review of various vegetable oils again confirms that stability during deep-frying depends heavily on the specific composition of the oil.
So, olive oil can be heated.
Nevertheless, even a high-quality olive oil should not be overheated unnecessarily or for extremely long periods.
Olive oil for deep-frying | Possible, but not every premium oil needs to go into the deep fryer
Deep-frying with olive oil is also fundamentally possible.
The International Olive Council describes olive oil as suitable for high pan-frying and deep-frying temperatures and states a smoke point of approximately:
210 degrees Celsius.
The temperatures used for many deep-frying applications are below this.
However, technical suitability does not mean that a particularly aromatic premium olive oil must necessarily be used for long-term deep-frying for economic reasons.
An intense Tsounati or Kalamon can be much more exciting sensorially as a:
- finish
- with bread
- on salad
- or enjoyed pure
For daily hot cooking, on the other hand, a harmonious extra virgin olive oil in a larger container might be more sensible.
The smoke point myth | Why a single temperature is not enough
The smoke point describes the temperature at which a cooking fat becomes visibly smoky.
This information is practically relevant.
However, it does not fully describe:
how quickly an oil oxidizes during prolonged heat exposure.
For this, other important factors include:
- fatty acid profile
- oxidation stability
- antioxidants
- free fatty acids
- duration of temperature
- repeated heating
Smoke point and oxidative stability are therefore not the same thing.
An oil with a high smoke point is not automatically the most stable oil under all real-life deep-frying conditions.
Classic sunflower oil at high heat
Classic sunflower oil often has a high proportion of:
linoleic acid.
Under prolonged and repeated heat exposure, this fatty acid profile can be more sensitive to oxidation than an oleic acid-rich profile.
Studies under repeated deep-frying conditions therefore often show a faster formation of degradation products in classic sunflower oil than in alternatives richer in oleic acid.
This does not explicitly mean:
Sautéing vegetables once with sunflower oil is automatically problematic for your health.
The chemical differences become particularly relevant with:
- prolonged heating
- high temperatures
- repeated deep-frying
- strong oxygen contact
The exposure situation is always part of the scientific conclusion.
High-oleic sunflower oil | The important exception
High-oleic sunflower oil significantly changes the comparison.
Due to its high oleic acid content, it contains significantly less linoleic acid than classic sunflower oil.
This significantly increases its oxidative stability.
A comparative study under repeated deep-frying conditions showed, for example, that high-oleic sunflower oil reached high concentrations of polar degradation products much later than classic sunflower oil.
High-oleic sunflower oil can therefore be a very good technical choice for high temperatures.
It is particularly interesting when:
- a neutral taste is desired
- high heat stability is important
- no distinct olive aroma is desired
What it does not possess is:
the characteristic olive-specific phenol profile and sensory experience of a high-quality extra virgin olive oil.
Anyone looking only at heat stability should therefore take high-oleic sunflower oil seriously. Anyone who also wants sensory quality and olive polyphenols is looking at another product dimension.
What happens to olive oil polyphenols when heated?
Two opposing statements are both wrong.
It is false that:
all polyphenols disappear immediately upon heating.
But it is equally false that:
polyphenols remain completely unchanged regardless of temperature and time.
Phenolic compounds can, during heating:
- be degraded
- be oxidized
- be transformed
- be partially transferred to the food
How much this happens depends, among other things, on:
- temperature
- duration
- frying cycles
- original phenol profile
- olive variety
- type of food
A study published in 2026 on repeated deep-frying with extra virgin olive oil found significant losses of phenolic compounds.
Depending on the food fried, the measured losses in this specific experimental setup after several cycles were approximately between:
70 and 93 percent.
These figures should not be understood as a general loss rate for normal short-duration frying at home.
However, they very clearly show:
heat stability does not mean chemical immutability.
Can components of olive oil pass into the fried food?
Yes.
Studies show that deep-frying doesn't just change the oil itself.
Certain components of olive oil can also pass into the food being fried.
A study from 2022 tracked numerous components of virgin olive oil during repeated deep-frying cycles and documented the transition of various substance classes into French fries.
This finding also shows that the chemistry of deep-frying is more complex than the simple question of whether an oil retains its original state.
Olive oil or sunflower oil for salad?
In principle, both can be used for salad.
Here, the deciding factor is particularly strong:
the desired taste.
Extra virgin olive oil
It is particularly interesting when the oil itself is intended to be part of the dish.
Depending on the olive variety, aromas can be reminiscent of:
- grass
- tomato leaf
- artichoke
- green almond
- herbs
- green fruits
In addition, there may be:
- bitterness

Sunflower oil
It can be useful when a profile as neutral in taste as possible is desired.

For me, the deciding question is not:

I want to know:
What do I want to do with it?
For Mediterranean cuisine, vegetables, salad, bread, and many warm dishes, I would personally use high-quality extra virgin olive oil.
Not because every other cooking oil is bad.
But because for me, olive oil combines several things at once:
- oleic acid
- good stability
- natural accompanying substances
- and taste
If someone wants a completely neutral oil, I understand just as well why they choose sunflower oil.
And when it comes to heat stability, high-oleic sunflower oil must fairly be viewed separately from classic sunflower oil.
What I don't find useful are phrases like:
Sunflower oil is poison.
Or:
Olive oil should never be heated.
Both are too simple.
I find it more exciting to understand the differences.
For me, there is something more to olive oil.
I usually buy sunflower oil because of its function.
A good olive oil can additionally tell a story of origin, an olive variety, and its own sensory character.
A Tsounati tastes different from Koroneiki.
Kalamon different from Hondroelia.
And exactly that is why an olive oil can be both:
