Properly storing olive oil | Light, heat, oxygen and freshness
High-quality olive oil is a natural product.
And unlike some wines, olive oil does not normally improve with years of storage.
A slow process of change begins after production.
Aromas can become weaker, oxidative changes increase, and the phenolic composition also changes.
How quickly this happens depends heavily on four factors:
Light.
Heat.
Oxygen.
Time.
Anyone who stores premium olive oil correctly can preserve its original sensory and analytical quality for significantly longer.
This is particularly interesting for:
- fresh early harvest olive oils
- extra virgin olive oils with character
- olive oils with documented phenolic analysis
- larger containers
- several premium olive oils opened at the same time
The most important rule is surprisingly simple: store olive oil in a dark place, as cool as possible, and keep it tightly sealed – and buy a container size that suits your actual consumption.

- Store in a dark place: Avoid direct sunlight and constant strong lighting.
- Do not store in a permanently warm place: A closed kitchen cupboard or pantry is better than a spot directly next to a stove or oven.
- Seal immediately after use: Limit contact with oxygen as much as possible.
- Buy the right container size: Choose the bottle or canister so that the oil is consumed within a reasonable amount of time after opening.
- Enjoy the freshness: Do not save premium olive oil for years for a special occasion.
These five rules are more important for everyday life than the question of whether your kitchen is currently 17, 18, or 19 degrees Celsius.

Why does olive oil change during storage?
One of the most important chemical changes is:
Oxidation.
This is where components of the olive oil react with oxygen.
Over time, this can change:
- aromas
- smell
- taste
- phenolic compounds
- tocopherols
- peroxide value
- UV parameters
- other chemical quality markers
How quickly an olive oil ages also depends on its initial composition.
This includes, among other things:
- olive variety
- degree of ripeness
- fatty acid profile
- phenol profile
- processing
- filtration
- water and sediment content
- packaging
- storage conditions
Therefore, two different extra virgin olive oils do not necessarily age at the same rate, even with identical storage.
This is exactly why I do not consider general tables such as:
"After twelve months, every olive oil still possesses exactly 70 percent of its polyphenols"
to be scientifically sound.
The four major factors | Light, heat, oxygen and time
1 | Light
Light is one of the most important avoidable stresses for olive oil.
Exposure to light can accelerate photochemical oxidation processes.
Natural pigments such as chlorophyll can, under certain conditions, be involved in reactions that promote oxidative changes.
Therefore, premium olive oil should not be kept permanently:
- on the windowsill
- in direct sunlight
- under intense lighting
- in a clear, transparent carafe on the countertop
2 | Heat
Many chemical reactions proceed faster as temperatures rise.
This also applies to aging and oxidation processes in olive oil.
Constant heat sources are therefore particularly unfavorable, such as:
- stove
- oven
- radiator
- sun-drenched windows
- very warm storerooms
However, there is no simple universal formula according to which every olive oil suffers exactly the same loss of quality for every additional degree.
3 | Oxygen
Oxygen is central to oxidative changes.
An unopened and correctly sealed bottle is therefore normally better protected than a container that has already been open for a long time.
Air constantly enters the container after it is opened.
Furthermore, as the fill level drops, the:
air space above the olive oil often increases.
For this reason, the bottle should not be left open unnecessarily after use.
4 | Time
Even with good storage, an olive oil will not remain exactly as it was on the day of bottling forever.
Aromatic and phenolic profiles change.
Freshness is therefore a genuine product feature.
2026 | New research impressively shows how important light is
A study published in 2026 in the Journal of Food Composition and Analysis examined:
Filtration and light exposure during the storage of extra virgin olive oil.
The oils studied were repeatedly analyzed over:
48 weeks
The central result was clear:
Light exposure was the most important factor for the degradation of the phenolic composition under the conditions studied.
Filtration also played a role, but was secondary to the light effect in this study.
Particularly interesting:
Under the specific conditions of the study, the samples stored in the dark met the requirements of the EU polyphenol claim for significantly longer over the entire observation period.
The light-exposed samples fell below the corresponding threshold much earlier.
This is a strong experimental result for the importance of dark storage.
However, it would be wrong to derive a universal shelf-life table for every olive oil from this.
The specific rate depends, among other things, on:
- initial composition
- olive variety
- phenol profile
- filtration
- light intensity
- temperature
- packaging
The practical conclusion is nonetheless clear:
Premium olive oil does not belong in the light permanently.
Which temperature makes sense for olive oil?
Temperature also influences storage stability.
Studies show, for example, that extra virgin olive oil ages more slowly at about:
15 degrees Celsius
than during significantly warmer storage at about:
25 degrees Celsius.
However, there is no need for a normal household to turn into a laboratory because of this.
A dark, relatively cool kitchen cupboard away from the stove and oven is usually perfectly sufficient for everyday life.
Much more important than hunting for a single perfect number is:
- no constant heat
- no direct sun
- no strong heat sources right next to it
I therefore wouldn't worry at home about whether the olive oil is currently at:
18 instead of 17 degrees
standing.
A bottle sitting for weeks next to a hot stove is much more relevant.
Does olive oil need to go in the fridge?
No.
Fridge storage is not necessary for normal use at home.
Low temperatures can slow down oxidative changes, it is true.
However, when cold, olive oil can:
- become cloudy
- form crystals
- partially solidify
This is not a quality defect and not a safety issue.
When the oil warms up again, it usually becomes liquid or clearer again.
For daily use, a:
dark and as cool as possible storage location
is usually more practical.
Can olive oil freeze?
At sufficiently low temperatures, components of the olive oil can crystallize and the oil can become partially or largely solid.
The exact temperature range differs from oil to oil.
This depends, among other things, on the:
individual fatty acid profile
of the oil.
This is why the well-known:
"fridge test"
does not work as a serious test of authenticity or quality.
Whether a bottle solidifies in the fridge or not proves neither premium quality nor fraud.
Which packaging protects olive oil particularly well?
Good packaging should above all:
limit light and contact with oxygen.
Dark glass
Dark glass reduces light ingress and has very low permeability to oxygen.
It is therefore a tried-and-tested packaging for premium olive oil.
Even so, a dark glass bottle should still not be left in the sun permanently.
Metal containers
Suitable food-grade metal containers completely protect the oil from light.
They can therefore be very useful for larger containers.
Bag-in-box
Bag-in-box systems are particularly interesting from the perspective of oxygen protection.
The inner bag contracts as it is dispensed.
Ideally, this means much less air reaches the remaining oil than with a rigid large container, where the air space increases with every dispense.
This principle can offer a real advantage, especially with larger quantities.
Clear glass
Clear glass does not provide sufficient light protection on its own.
It can still work if:
- the bottle is consistently stored in the dark
- a suitable coating is present
- extensive casing or packaging blocks light
Plastic
Food-grade plastic packaging is not automatically unsafe.
However, the plastics used differ from glass or metal in their:
- light protection
- oxygen permeability
- gas permeability
The sweeping statement "olive oil in plastic is dangerous" would therefore be just as wrong as the statement "every plastic packaging protects just as well as metal".
Dark glass does not turn bad oil into good oil
This point is often forgotten in marketing.
Good packaging protects quality.
It does not create it.
Even an inferior olive oil can be sold in an elegant dark bottle.
Therefore, to evaluate a premium olive oil, I am also interested in:
- quality grade
- olive variety
- origin
- producer
- harvest
- processing
- freshness
- sensory profile
- chemical analyses
How long does unopened olive oil last?
There is no single shelf-life number for every olive oil.
The development of quality depends, among other things, on:
- initial quality
- fatty acid profile
- phenol profile
- packaging
- temperature
- light
- oxygen
- length of storage
A high-quality and correctly stored extra virgin olive oil can remain in good condition sensorially and chemically for a longer period of time.
However, this does not mean that:
aromatics and phenolic composition remain unchanged during this entire time.
For me, therefore, the following applies:
Buy and enjoy premium olive oil as fresh as possible – do not collect it for as long as possible.
How quickly should an opened bottle be consumed?
There is no countdown that starts after opening where the oil suddenly goes bad after exactly 30, 60, or 90 days.
But:
Contact with oxygen increases.
UC Davis therefore recommends choosing a container size that can be consumed within:
a few weeks to a few months
after opening.
I also consider this a very good practical guideline.
For example, anyone who only uses:
one to two tablespoons per week
might not need a 5-liter canister.
On the other hand, anyone who cooks with olive oil daily for several people can get through a larger container much faster.
The right size therefore does not depend on the greatest price advantage per liter, but on actual consumption.
Why the right container size is so important
When shopping, it is easy to look at:
the price per liter.
However, what is also important for the quality in your own kitchen is:
How long does this container sit around after opening?
A 3- or 5-liter container can, for example, be a perfect fit for:
- gastronomy
- large families
- people with high daily consumption
For a household that only uses small quantities, the following may be more practical:
- 250 ml
- 500 ml
- 750 ml
The best container size is the one that gets empty in time.
Does the two-bottle system make sense?
Some consumers buy a large container and regularly decant smaller amounts into a small table or kitchen bottle.
This can make sense.
However, it is not automatically necessary.
When decanting, the oil comes into contact with air again.
If you are decanting:
- use a clean bottle
- let the bottle dry completely
- do not leave old oil residues inside
- avoid unnecessarily large air space
- close the main container immediately after use
- do not constantly transfer back and forth between containers
For many households, the simplest solution remains: buy the appropriate container size from the start.
Why the vessel should be completely dry
When olive oil is decanted, the target vessel should be:
clean and completely dry.
The following are particularly problematic:
- water residues
- food residues
- old oxidized oil residues
This is especially true for decorative carafes that are simply topped up over months.
Old, rancid residues can impair the taste of the fresh olive oil.
Does an olive oil carafe make sense?
At the dining table:
yes.
As a long-term storage vessel:
often not ideal.
Especially open or transparent carafes usually offer less protection compared to a well-sealed dark container.
Those who like using a carafe can therefore:
- pour only a small amount
- use it promptly
- store the main container in a dark place and keep it well-sealed
Harvest and best-before date | Two different pieces of information
Both details are useful.
However, they answer different questions.
Best-before date
The best-before date does not mean:
The olive oil is automatically spoiled the next day.
It describes the period for which the product is expected to retain its specific properties under the intended conditions.
Harvest year or harvest date
The harvest can provide additional information about the:
freshness of the specific olive oil.
A distant best-before date does not replace this information.
For premium olive oil, I am therefore interested in both levels: legal labeling and actual harvest.
What happens to polyphenols during storage?
Polyphenols are not a single chemical substance.
Olive oil contains various phenolic compounds.
During storage, these can:
- decrease
- be oxidized
- be hydrolyzed
- convert into other compounds
Therefore, the statement:
“Polyphenols simply decrease evenly”
is too simple.
Individual compounds can react differently.
Under certain conditions, individual simpler phenols can temporarily even increase due to degradation or hydrolysis processes, while other compounds decrease.
The crucial point is: The phenolic profile of an olive oil is dynamic.
A laboratory value is always a snapshot
If, for example, the following is measured in an analyzed sample:
2081 mg total phenols per kg
then this is:
a real analytical value of this sample at the time of analysis.
It does not mean:
The opened bottle has, after:
- six months
- twelve months
- eighteen months
still exactly the same value.
Exactly for this reason, a serious analysis always includes the product, harvest or batch, method, and analysis date in the context.
Current polyphenol values and why storage remains important

These values are analytical product information and not guaranteed values for every bottle throughout its entire shelf life.
Their interpretation requires:
- harvest
- batch
- analysis method
- analysis date
- storage conditions
Total polyphenols and EU Health Claim | Not the same
This distinction is important even in an article about storage.
There is an approved EU health claim for olive oil polyphenols.
The wording is:
“Olive oil polyphenols contribute to the protection of blood lipids from oxidative stress.”
The claim may only be used for olive oil that contains at least:
5 mg of hydroxytyrosol and its derivatives, such as oleuropein complex and tyrosol, per 20 g of olive oil
When using the claim, consumers must be informed that the beneficial effect is obtained with a daily intake of:
20 g of olive oil.
Any total polyphenol value of, for example, 500, 800, or 2000 mg/kg does not automatically prove that this claim is met.
The decisive factors are the claim-relevant compounds and the underlying analysis.
These compounds can also change during storage.
EU health claim for olive oil | Requirements and laboratory testing
How do you recognize rancid olive oil?
Rancidity is a sensory defect that can occur particularly through oxidative aging.
A rancid oil can, for example, evoke associations with:
- old nuts
- stale fat
- wax
- old oilseeds
- similar oxidized aromas
This is not always easy to recognize for inexperienced consumers.
Therefore, I occasionally recommend:
intentionally smelling and tasting a truly fresh extra virgin olive oil.
Then a sensory comparison is created.
A mild olive oil is not automatically old
This is also a common misconception.
Bitterness and pungency are among the positive sensory characteristics of extra virgin olive oils and can be related to phenolic compounds.
However:
Not every high-quality olive oil must be extremely bitter and pungent.
The sensory characteristics depend on, among other things:
- olive variety
- degree of ripeness
- harvest time
- processing
- phenolic profile
A mild oil can therefore be:
fresh and high-quality.
And it is impossible to calculate how many polyphenols are still contained based on a lack of throat irritation.
Is a very pungent olive oil automatically particularly high in polyphenols?
Not necessarily.
Certain phenolic compounds contribute to bitterness and pungency.
Sensory intensity can therefore provide clues about the composition.
However, it does not replace:
a laboratory analysis.
Two olive oils can have different phenolic profiles and yet be perceived very differently in terms of sensory attributes.
Cloudy olive oil is not automatically bad
Cloudiness does not prove a quality defect, either.
A fresh, unfiltered olive oil can contain:
natural suspended matter.
Cold temperatures can also temporarily make olive oil cloudy.
In unfiltered oil, larger amounts of:
- water
- sediment
- suspended particles
can influence long-term stability.
Visual appearance alone is therefore not enough for a quality assessment.
Color does not reveal quality
Green does not automatically mean high quality.
And:
Golden yellow does not automatically mean old.
The color depends on, among other things:
- olive variety
- degree of ripeness
- pigments
- harvest
- processing
In professional sensory tests, the color is therefore deliberately not used as a quality criterion.
The color of a bottle should never be your main purchase criterion.
Should olive oil stand next to the stove?
If a better place can be found: no.
The spot right next to the stove or oven is practical, it's true.
But the olive oil is regularly exposed there to:
- heat
- temperature fluctuations
- often additional light
A closed cabinet near the countertop is usually the better solution.
The oil remains within easy reach without being unnecessarily stressed long-term.
Properly storing olive oil in catering and restaurants
Basically, the same physical rules apply to restaurants, hotels, catering, and commercial kitchens.
The big difference is:
consumption.
A large container can work excellently in catering if it is used up quickly.
Important factors remain:
- dark storage
- moderate temperature
- clean extraction
- sealed containers
- good storage rotation
- no unnecessarily long storage of opened containers
For a business with high daily consumption, a larger canister, for example, can be more sensible than numerous small bottles.

For a single-person household with low consumption, on the other hand, I would not choose a very large container just for the price per liter.
Small containers | Interesting for slow consumption and several open oils
Those who only use small quantities or like to taste different premium olive oils in parallel can use smaller bottles strategically.
This shortens the time between:
opening
and:
complete consumption.

Can you have several premium olive oils open at the same time?
Of course.
I like doing that myself.
A mild oil for one dish.
A robust early harvest olive oil for another.
An intense oil for a finish.
However, anyone who has several bottles open at the same time should choose the:
container size
even more consciously.
Five 750 ml bottles opened at the same time can stand for a very long time for a household with low consumption.
With several oils, smaller bottles can therefore be particularly sensible.
The most common mistakes in storage
- Leaving olive oil on a sunny windowsill for weeks
- Storing the bottle permanently right next to the stove or oven
- Leaving the cap open after use
- Buying a much too large container for very slow consumption
- Saving olive oil for years for a special occasion
- Pouring new oil into a carafe with old rancid residues
- Pouring into containers that are still damp
- Viewing the green color as proof of quality
- Interpreting cloudiness automatically as spoilage
- Rating a lack of pungency automatically as a sign of old olive oil
- Using the refrigerator test as an authenticity check
Ayhan's personal recommendation for storage
My recommendation is much simpler than some olive oil guides present it.
Buy good olive oil as fresh as possible.
Keep it in the dark and not right next to the stove.
Close the bottle after each use.
And buy a size that matches your actual consumption.
I wouldn't make a complicated table at home about whether my bottle stands at:
17.8 or 18.6 degrees Celsius.
Much more important is:
Does it stand in direct light for weeks?
Does it stand right next to the stove?
Is it constantly open?
And do I need two years to finish a large canister?
With high-phenolic premium olive oils, transparency is also important to me.
If we currently communicate for Pamako Gold Organic:
2081 mg total phenols per kg
then this is an extraordinary analytical product property of the examined sample.
But even this value is not frozen in a bottle for all time.
Chemically, an olive oil continues to live.
That is why for me:
analysis and storage belong together.
An excellent initial analysis is interesting.
Sensible storage subsequently helps to preserve as much of this original quality as possible.

Where is the best place to store olive oil?
Dark, as cool as possible, and tightly sealed. A closed kitchen cabinet or a pantry away from the stove and oven is well-suited for many households.
Which temperature is optimal?
There is no single universal ideal temperature. Lower moderate temperatures slow down aging processes compared to permanently warm storage. For the household, it is primarily important to avoid excessive heat and large temperature fluctuations.
Are 15 degrees better than 25 degrees?
Research shows that extra virgin olive oil can remain stable for longer at about 15 degrees Celsius than at 25 degrees. However, this does not require exact temperature control in a household setting.
Can olive oil be stored in the refrigerator?
Yes. Cold does not automatically spoil olive oil. However, it may become cloudy or partially solid. For daily use, refrigeration is usually unnecessary.
Does cold destroy olive oil?
Normal cooling or temporary solidification is not evidence of a loss in quality. The oil usually becomes liquid again at higher temperatures.
Can the refrigerator test be used to identify real olive oil?
No. Different olive oils react differently to cold due to their respective fatty acid compositions. The refrigerator test is therefore not a reliable test of authenticity.
Is dark glass better?
Dark glass offers good protection from light and is a proven packaging choice for premium olive oil. Suitable metal containers and bag-in-box systems can also offer excellent protection.
Is bag-in-box good for olive oil?
Yes. With suitable systems, the collapsing inner bag can reduce contact with oxygen during dispensing. This can be particularly interesting for larger containers.
Are metal canisters good?
Suitable food-grade metal containers provide complete protection from light and can therefore be useful, especially for larger quantities.
Are plastic bottles generally bad?
No. Food-grade plastic is not inherently unsuitable. However, there are differences, particularly regarding light protection and gas permeability of various materials.
How quickly should opened olive oil be consumed?
There is no general expiration date after opening. For optimal freshness, it is sensible to choose a container size that will be consumed within a few weeks to a few months.
Can olive oil still be good after the best-before date?
Yes. The best-before date is not an automatic "discard date." Condition, storage, smell, and taste also play a role. For quality reasons, premium olive oil should still be used as fresh as possible.
Does olive oil get better with age?
No. The typical fruitiness and freshness of a high-quality extra virgin olive oil tend to decrease with long storage.
Does olive oil lose polyphenols during storage?
The phenolic composition changes during storage. Individual compounds can be degraded or transformed. The rate and extent depend heavily on the specific olive oil and the storage conditions.
How important is light really?
Very important. A long-term study published in 2026 identified light exposure under the studied conditions as the most important factor for phenolic degradation.
Does a lab value like 2081 mg/kg remain constant indefinitely?
No. A lab value describes the analyzed sample at a specific point in time. The composition and values of a natural product can change with time and storage.
Is a mild olive oil automatically old?
No. Sensory intensity depends heavily on the olive variety, degree of ripeness, harvest, and processing.
Is a very pungent olive oil automatically particularly rich in polyphenols?
Not necessarily. Bitterness and pungency can be related to phenolic compounds, but they do not replace an analysis.
Is cloudy olive oil bad?
Not automatically. Unfiltered olive oil or olive oil that has become cloudy due to cold temperatures can be perfectly normal.
Can I leave olive oil on the countertop?
If the spot is dark and cool, that is less problematic. Direct sunlight, intense lighting, and immediate proximity to a stove or oven should be avoided.
Is a large canister always cheaper and therefore better?
The price per liter may be lower. However, for the actual product quality after opening, it is decisive how quickly the contents are consumed. If consumption is slow, a smaller container may be more sensible.
