Which olive oil for salad?

In a salad, the olive oil is not heated.

Its aroma therefore remains particularly immediately perceptible.

However, that does not mean that the most intense olive oil should be chosen for every salad.

The key is the balance between the ingredients and the olive oil.

Its fruitiness of 5.0, as well as its bitterness of 3.6 and pungency of 4.2, result in a much more characterful profile.

This makes Marmaro very well-suited for more aromatically intense salads and Mediterranean appetizers.

Which olive oil for tomato, feta, and Greek village salad?

Tomato, feta, onion, herbs, and olives already possess distinct flavors.

Here, the olive oil is allowed to show character as well.

Therefore, particularly interesting options are:

  • Di Morea Organic
  • Marmaro
  • Kouros of Zeus Red
  • Mitira Organic for a more harmonious result

There is no single "correct" combination.

By switching the olive oil, the same salad can be significantly altered in sensory terms.


Which olive oil for bread and dips?

Bread is one of the simplest ways to truly get to know premium olive oil.

The bread provides very little distraction. Therefore, the fruitiness, bitterness, and pungency of the olive oil stand out clearly.

Here, characterful olive oils can take center stage.

Marmaro, Di Morea, Pathos, or Kouros of Zeus Red can be particularly interesting for this use.

Those who prefer a milder combination, however, can choose Mitira.

A little salt or herbs can be added. However, for a genuine sensory evaluation, we recommend first trying the olive oil without any other ingredients.


Can you use extra virgin olive oil for cooking?

Yes.

The widespread claim that high-quality extra virgin olive oil must never be heated is false.

Extra virgin olive oil can be used for numerous culinary applications, including:

  • Steaming
  • Searing
  • Braising
  • Oven dishes
  • Sauces
  • Soups
  • Vegetable dishes
  • Fish
  • Meat dishes

Olive oil has a high proportion of monounsaturated fatty acids and demonstrates good oxidative stability when heated.

The decisive factor is not the old blanket rule never heat premium olive oil, but rather a reasonable approach to temperature and time.


Can you use olive oil for frying?

Olive oil can also be used for frying.

A rigid limit of exactly 180 degrees for every olive oil makes little sense.

The smoke point depends, among other things, on quality and composition.

The International Olive Council describes olive oil as heat-stable and cites temperatures of approximately 130 to 190 degrees Celsius for various frying applications.

For everyday cooking, this means:

Do not unnecessarily overheat the olive oil and let it smoke continuously.

If olive oil is visibly smoking heavily, the temperature is too high.


Do you have to use a different vegetable fat for high-heat searing?

Not as a rule.

The blanket statement that other vegetable fats are automatically better for high-heat searing is too simplistic.

Extra virgin olive oil can also be suitable for many frying applications.

What is important is:

  • Temperature
  • Duration
  • Quality of the olive oil
  • Desired aroma
  • Type of food

Under very long and extremely high temperature loads, the aroma and nutrients will naturally change more significantly.

However, this applies not only to olive oil.


What happens to polyphenols when cooking?

Polyphenols do not disappear completely upon first contact with heat.

Equally false, however, would be the claim that they remain unchanged when heated.

Scientific studies show that phenolic compounds change differently depending on:

  • Temperature
  • Cooking time
  • Cooking method
  • Olive variety
  • Initial concentration
  • Food contact

Some may be broken down, some are retained, and certain compounds can also be transferred between olive oil and food during cooking.

Therefore, our recommendation is not:

Never heat the best olive oil.

But rather:

Premium olive oil can be sensibly used both raw and warm. However, its original sensory profile can be experienced most unadulterated when raw.


Which olive oil for daily cooking?

Those who cook with olive oil every day do not necessarily need a 500 ml bottle of a very intense collector's product for every pan.

Here, practical criteria also play a role:

  • Flavor profile
  • Consumption
  • Container size
  • Organic preference
  • Price per liter

Pamako Gold Organic is produced from Tsounati in the Selino region near Chania.

It currently has 2081 mg of total polyphenols per kg.

Sensorially, too, it is not a restrained olive oil.

If you are looking for distinct bitterness, peppery pungency, and a long finish, you will find a particularly intense profile here.

Pamako Silver Organic | A second intense direction

Pamako Silver combines Tsounati and Koroneiki.

The current total polyphenol content is 1466 mg per kg.

This means Silver also possesses a very pronounced phenolic profile.

The comparison with Gold is interesting precisely because it is not just the number that is different.

The variety composition also changes the sensory experience.

Kouros of Zeus Red | Kalamon for a direct comparison

Kouros of Zeus Red has a special feature that goes far beyond its current total polyphenol content of 835 mg per kg.

It is made from Kalamon.

Many people mainly know this olive variety as a table olive.

As an extra virgin olive oil, however, it shows an independent character.

Kouros Red is therefore particularly suitable for people who not only want to get to know intensity when consumed straight, but also different olive varieties.

Pathos Organic | Koroneiki with a bold character

Pathos Organic comes from Crete and is made from Koroneiki.

It currently contains 834 mg of total polyphenols per kg.

The current sensory profile is:

  • Fruitiness 6.0
  • Bitterness 3.5
  • Pungency 4.1

Pathos is therefore well-suited for people who want to combine strong fruitiness with clear bitterness and pungency when enjoyed straight.

At the same time, it can be used excellently as a finish over prepared Mediterranean dishes.


Mitira Organic | Even a harmonious olive oil can impress when consumed straight

Enjoying it straight does not automatically have to mean maximum pungency.

Mitira Organic, made from Kolovi and Adramitiani, currently contains 426 mg of total polyphenols per kg.

With a fruitiness of 4.4, bitterness of 3.1, and pungency of 3.8, it is more harmonious than some of our very intense products.

This can be particularly interesting for people who want to consciously taste premium olive oil straight for the first time.

The best olive oil for enjoying straight is not automatically the one with the highest number.


Do you have to drink olive oil on an empty stomach in the morning?

No.

There is no general quality rule, nor is there a requirement for the European Health Claim, that olive oil must be taken in the morning or on an empty stomach.

Some people personally like this routine.

Others enjoy premium olive oil with meals, over vegetables, with bread, or during a deliberate tasting.

These are different habits, not quality levels.


The 20 g mentioned in the EU Health Claim is not a general drinking recommendation

The European Health Claim for olive oil polyphenols is often misunderstood.

The authorized claim states:

Olive oil polyphenols contribute to the protection of blood lipids from oxidative stress.

It may only be used for an olive oil that contains at least 5 mg of hydroxytyrosol and its derivatives per 20 g of olive oil.

In addition, it must be stated that the positive effect is achieved with a daily intake of 20 g of olive oil.

However, this does not mean:

Everyone should drink 20 g of olive oil straight every day.

The 20 g are part of the legal conditions of the authorized claim.

They are not a general medical dosage.


A high total polyphenol value does not automatically prove the Health Claim

This distinction is also important.

A total polyphenol value of, for example, 500, 800, or 2000 mg per kg may not simply be converted to 20 g and then fully designated as hydroxytyrosol and its derivatives.

For the Health Claim, the specifically defined compounds are relevant.

That is why we at Green Agora check lab values and Health Claim requirements separately from each other.

Mild, medium, or intense | How to find your style

You like harmonious olive oils

Then Mitira Organic or other balanced profiles can be a good starting point.

You like distinctly fruity olive oils with character

Then Di Morea, Marmaro, or Pathos are interesting candidates.

You love strong bitterness and peppery pungency

Then it is worth comparing Pamako Gold, Pamako Silver, and Kouros of Zeus Red.

None of these groups is objectively better.

They describe different taste preferences.


One olive oil or several | What does Green Agora recommend?

You can cover a great deal with one high-quality extra virgin olive oil.

However, those who use olive oil regularly and develop a joy for different taste profiles often benefit from two or three different products.

A very practical system is:

  1. a larger quantity olive oil for daily cooking
  2. a premium olive oil with character for salads and finishing
  3. optionally, a particularly intense olive oil for enjoying straight

This is comparable to spices or wine.

You do not own several products because one of them is bad.

You own several because they fulfill different tasks.

That is precisely why we do not advise based on a fixed scheme.

When someone asks me which olive oil they should take, I first want to know how they intend to use it.

A customer who cooks for a family every day needs a different recommendation than someone who consciously enjoys an intense premium olive oil straight every morning or evening.

And someone who mainly eats salad might prefer a completely different profile again.

Therefore, I do not automatically recommend the olive oil with the highest polyphenol value or the highest price.

I ask:

Do you like bitterness?

Do you like distinct pungency?

Would you like to enjoy the olive oil straight?

How much do you consume?

Is organic important to you?

What dishes do you usually cook?

A much better recommendation emerges from these answers.
