Ayhan's Olive Oil Favorites | 5 personal recommendations from Green Agora
Over time, I have tasted more than 50 different olive oils. In doing so, I have learned one thing above all else: Premium olive oil can taste incredibly different.
Some olive oils are intense, bitter, and distinctly pungent. Others seem more harmonious, fruity, or accessible. Some fascinate me with their olive variety, others with their origin, aroma, or the way they transform a dish.
That is why, for me, there is no single best olive oil for everyone.
My personal favorites serve different purposes. One inspires me with its extraordinarily intense character. Another I like to use versatilely in the kitchen. Some I recommend to experienced olive oil lovers, others to people who are just discovering premium olive oil.
On this page, I will introduce you to five olive oils that I personally like very much. I will explain why I chose them, how I perceive their character, and who I believe they are particularly well-suited for.

What makes an olive oil special to me
In my selection process, I don't just look at a single number, a label, or a beautiful bottle.
I am primarily interested in:
- Origin
- Olive variety
- Producer
- Processing
- Fruitiness
- Bitterness
- Pungency
- Aroma
- Harmony
- and the personal impression when tasting
Available laboratory analyses can also provide valuable additional information.
However, for me, numbers never replace the sensory evaluation of an olive oil.
A very high polyphenol content, for example, does not automatically mean that this specific olive oil will taste best to everyone. Likewise, a clearly perceptible pungency alone is not yet definitive proof of quality.
Ultimately, the overall picture must be right for me:
Origin | Craft | Sensory profile | Character | Transparency.

My favorite for extraordinary intensity
Pamako Gold Organic from Crete
For me, Pamako Gold is one of those olive oils that you don't just taste in passing.
It is produced from Tsounati olives and comes from the mountains of Crete.
Even during tasting, a pronounced character with intense herbal and green aromas emerges.
The aroma profile includes impressions of:
- fresh herbs
- green almonds
- olive tree leaves
- freshly cut grass
- artichoke
- green apple
- tomato leaves
What I especially like about Pamako Gold is this combination of aromatic complexity, bitterness, pungency, and clear presence.
To me, this is not an olive oil that hides its taste.
I therefore particularly recommend it to people who already have experience with characterful olive oils and are consciously looking for an intense style.
I like to use Pamako Gold as a finish over vegetables, salads, or fish. I also find it very exciting to consciously pair it with fresh bread, as the oil can then be tasted with almost no distractions.

Origin: Crete
My impression: intense, complex, and full of character
Particularly suitable for: experienced connoisseurs and lovers of expressive premium olive oils

My favorite for versatile everyday use
Di Morea Organic from Messenia
For me, Di Morea Organic is one of those premium olive oils that can be integrated into everyday life in a particularly uncomplicated and versatile way.
It is made from Koroneiki olives and comes from the Kiparissia region in the Peloponnese.
The taste profile combines fruitiness with perceptible bitterness and pungency, without losing its versatility in my opinion.
The aromas include, among others:
- fresh herbs
- green almonds
- grass
- artichoke
- green apple
- tomato leaves
It is precisely this balance that I like.
Di Morea has enough character to be tasted consciously, but for me, it also works very well in a versatile Mediterranean kitchen.
I like using it for salads, vegetables, and as a finish over various Mediterranean dishes.
When someone asks me which premium olive oil they can use regularly without having to sacrifice character, Di Morea is one of the products I am particularly happy to talk about.

Origin: Kiparissia in the Peloponnese
My impression: balanced, characterful, and versatile
Particularly suitable for: daily Mediterranean cooking and versatile use

My favorite for lovers of special olive varieties
Kouros of Zeus Early Harvest
Kouros of Zeus Early Harvest is particularly exciting for me because of its Kalamon olive.
Many people know Kalamon or Kalamata olives primarily as table olives. Here, the variety shows a completely different side.
The premium olive oil comes from the Krokes region in the Peloponnese and is made from Kalamon olives.
Sensory-wise, it combines fruitiness with clear, but for me balanced, bitterness and pungency.
Its aroma profile includes, among others:
- fresh herbs
- tomato leaves
- green grass
- nuts
- olive tree leaves
- green almonds
I find Kouros of Zeus especially interesting for people who are already familiar with Koroneiki olive oils and want to experience how differently Greek olive varieties can taste as olive oil.
The characteristic red bottle also makes Kouros of Zeus a product that immediately draws attention during a tasting or as a gift.
Olive variety: Kalamon
Origin: Krokes in the Peloponnese
My impression: distinctive, characterful, and exciting in its varietal type

My favorite when taste and presentation come together
Pathos Organic from Crete
Pathos stands out even before the bottle is opened.
The special design looks almost like a perfume bottle and differs significantly from a classic olive oil bottle.
For me, however, an extraordinary presentation alone is not enough.
Pathos is made from Koroneiki olives and comes from Kavalaria Korfes on Crete.
Sensory-wise, it shows a multifaceted spectrum of aromas with impressions of:
- fresh herbs
- olive tree leaves
- artichoke
- apple
- citrus fruits
- green banana
- almonds
- tomatoes
It is precisely this combination of aroma and extraordinary presentation that makes Pathos special to me.
I see it at a dinner where the olive oil can consciously stand on the table, just as much as as a gift for someone who appreciates both taste and design.
For me, Pathos is a good example of how premium olive oil can be a gourmet product and a gift at the same time.

My favorite for an accessible introduction
Mitira Organic from Lesbos
Not everyone wants to begin their first conscious premium olive oil experience with an especially intense oil.
For me, Mitira Organic is therefore an interesting recommendation for people who want to get to know high-quality Greek olive oils and discover a more accessible, harmonious overall character.
The premium olive oil comes from the island of Lesbos and is made from the typical Kolovi and Adramitiani olive varieties found there.
The taste profile includes, among others:
- fresh herbs
- green almonds
- freshly mown grass
- artichoke
Mitira still shows perceptible bitterness and pungency.
I would therefore not simply describe it as completely mild. However, in direct comparison with very intense premium olive oils, I perceive its character as more accessible and versatile.
It is precisely this balance that makes Mitira a beautiful way for me to consciously discover different olive varieties and regions for the first time.

Which of my five favorites could suit you?
If you don't want to compare all five products with each other, perhaps this simple orientation will help:
You love intense premium olive oils
Then I would look at Pamako Gold first. Within my selection, it is one of the most characterful olive oils and is aimed particularly at people who consciously look for pronounced bitterness, pungency, and complex green aromas.
You want a versatile premium olive oil for everyday life
Then Di Morea Organic is one of the most interesting candidates for me. It possesses character, but at the same time can be used in many different dishes.
You want to get to know a special Greek olive variety
Then I find Kouros of Zeus Early Harvest particularly exciting. The Kalamon olive opens up a different sensory perspective than many more well-known Koroneiki olive oils.
You are looking for a special olive oil to give as a gift
Then I would look at Pathos. For me, it combines an interesting taste with an extraordinary presentation and is therefore particularly suitable for birthdays, weddings, Christmas, or other special occasions.
You want to get to know premium olive oil for the first time
Then I would consider Mitira Organic. The combination of Kolovi and Adramitiani has a distinct character, which I find more accessible compared to particularly intense oils.
Why I don't create a ranking from 1st to 5th place
I could simply number these five olive oils.
For me, however, that would simulate a precision that does not exist in personal taste.
Pamako Gold serves a different purpose than Mitira Organic. Pathos appeals to a different person than Di Morea. Kouros of Zeus, in turn, is interesting in a very unique way because of its Kalamon olive.
A premium olive oil can be excellently produced and still not suit your personal taste.
That is why at Green Agora I try not only to answer the question:
Which olive oil do I find good?
I find it much more important to ask:
Which olive oil could suit you?

What bitterness and pungency mean to me
Many people are surprised when they taste a characterful extra virgin olive oil neat for the first time.
It can taste bitter on the tongue and develop a clearly perceptible pungency in the throat.
For me, bitterness and pungency are part of the sensory character of many premium olive oils – but they should always be considered together with fruitiness, aroma, harmony, and a clean taste.
Therefore, I never judge an olive oil solely by how much it scratches the throat or how bitter it tastes.
I am interested in the interplay.

The role polyphenol values play for my favorites
Polyphenols play an important role for several premium olive oils in our range.
Current laboratory analyses can provide very interesting additional information about a specific olive oil.
Nevertheless, I do not think it makes sense to permanently write fixed analysis values next to every product in this personal favorites article.
Olive oil is a natural product.
Analysis values can differ due to, among other things:
- Harvest
- Batch
- Storage
- Time of analysis
- Analysis method
Therefore, it is best to find current product-specific values and available analyses directly on the respective product pages or in our analysis articles.
For my personal selection of favorites, the laboratory value remains part of the overall picture – not the sole ranking criterion.

First, consider what is important to you in terms of taste.

- Do you prefer a more harmonious character?
- Are you looking for a versatile oil for everyday cooking?
- Would you like to get to know a specific olive variety?
- Are you interested in a specific region of Greece?
- Are you looking for an olive oil as a gift?
Your own understanding continues to develop with every tasting.
